My 2 & 4 year old boys love play-doh.
For DS1's 3rd birthday I made him an its & bits box - it had crayons, paper, card, pom-poms glitter etc in it (& play-doh), and he loved it. He is the biggest car freak, & I felt the same as you...hundreds of cars, surely he need no more!

My 3 year old ds plays for hours with his toy farm + playpeople. But he's very into people-type things. Ds1 at that age would have played solely with cars and trains. Depends what they're into.
