I would like to make great free range chicken nuggets - does anyone have any top tips please?

I use parmigiano cheese and almond flour to make a low carb healthier crumb and dip the chicken in an egg wash first then the mix of cheese and almond flour. Sometimes I add onion and garlic powders for extra flavour.

buy chicken, cut up, daub with mayo, press into crumbs, fry nicely

add herbs, parmesan, paprika to the crumbs...whatever takes your fancy

mayo may also be substituted with any other sticky stuff you have in the fridge.

A mix of ketchup and meyo. Breadcrumbs with cornflakes added

Chunks of chicken, (or turkey). Coat in mayonnaise, roll in crushed rice crispies. Bake on tray for 30 minutes. So much nicer than it sounds!

I used flour, egg and crushed up krisprolls (those Scandinavian ones) much nicer than the time I made them with real bead. Bit of a faff but very tasty.

I buy chicken tenderloins.
Flour with salt and pepper.
Beaten eggs with a little milk.
Panko bread crumbs.
Dip chicken tenders in flour and coat, then into egg mixture and coat, then coat with bread crumbs.
Onto oven tray and spray with oil.
Into oven at 180 degrees for 12-15 minutes, turning half way through.

Slice chicken.
Have 3 shallow bowls one with flour, one with beaten egg, one with cornflakes that have been blitzed to a fairly fine crumb.

Coat chicken in flour, then egg, then cornflakes.
Bake in oven at 180 for 20 mins (or shallow fry).

I don't make nuggets but I do make homemade (baked) "fried" chicken. You can make the crumb out of crumbs (garlic bread crust works well) or cornflakes bashed up. Dunk it in butter milk (or soak it if you have the time), Shake it off, brush with a little bit of beaten egg white, roll in crumb and spray with fry light or oil spray. In the oven on 200 ish and turn regularly so it goes golden. The milk makes the chicken moist and the egg white works as a glue for the crumb, but I am sure there are lacto-ovo free versions.

Sorry. Seems I'm not the only one! Didn't RTFT obviously

Cut up chicken, blitz a healthy slice of bread, dip in egg then breadcrumbs and back into bread. I also use the Nando’s lemon and herb spice mix on occasion - got that tip from a blogger they apparently use it in chip shops

Ivechanged19 · 12/10/2019 22:26

Obviously using free rang chicken and eggs. Also it’s not necessarily the Nando’s one the chip shop use but that type of blend!

Thank you so much everyone- it will be nuggets for tea today and I will try the mayo - had no idea you could do that!
