How to get my son to eat a wider variety of food

My DS (9) eats a fairly healthy diet, plenty of fruit, some veg but I'm struggling to get him to eat different foods.

Most weeks involve ham & tomato pizza, fishfingers, sausage rolls, cheese & pepper omelette, pate on toast, tomato pasta and a butcher-made scotch egg. Plus baby tomatoes, cucumber, beetroot and sweet peppers. Week after week after week.......

I make other stuff - cottage pie, risotto, different pasta sauces, chicken kebabs, fish cakes, all sorts but he won't eat them and would rather go hungry.

He seems healthy, plenty of energy, no problems but it's just so DULL. Should I not worry, he's healthy & happy, or am I storing up problems for the future?

I feel like at 9yo I would demand that they eat some of what I've made. Unless it makes them gag then they of course can stand the taste.

But then I came from a family where you had to finish all your food and you got what you was given. With the exception of liver sometimes
