Refusing all veggies and fresh fruit - what do you do?

My son, who is 2 years and 3 months is such a picky eater and has become even pickier as time goes on. When he was 18 months he was happy to try anything. All veggies, fish, beans, meats etc. Then he started refusing everything, but would at least eat broccoli and eggs, salmon. Now he refuses those, so we are down to:

Beef meat balls
Chicken nuggets (sometimes - he is starting to refuse those!)
Fish potato sticks (most of the time)
Beans w tomato sauce (sometimes)
butter and bread
fruit puree (will not eat any fresh fruits! EVER!)
pistachios
yogurts
milk
cheese (but now starting not to like as much)
Pizza w hidden puree carrots and green beans in sauce (50% chance he will eat)
wheatabix
banana bread w hidden shredded carrots and squash

Basically, I am having to think of ways, any ways to hide nutrients in his foods. So frustrating!

Are there any of you who just give up a little bit on offering veggies and fruits? Do they just start to like it? My daughter who is almost 4 eats EVERYTHING! Loves fruits, veggies, fresh home made foods etc.

Anything he sometimes eats, or sometimes likes, he likes well enough and is being fussy.
Put the food down, walk away, take food away 15 minutes later, nothing else until next meal.

Will try this over the weekend. All family meals and not serving anything else. I do put the food down and walk away if he is being fussy...bc sometimes that does work and he will eat it :) Today he was being ultra fussy. But at dinner he ate what was served...but I made it bc I knew he would eat it....his new favourite..pizza. I hide carrots and green beans in the sauce. What I plan to do this weekend is for lunch make our family meal something I know he will eat and dinner meal what we all eat, but not cater to him...

My three y o is much the same. Thank god he eats pasta with bolognese. Because unbeknownst to him it is more veg than meat. That's the only veg he eats. He eats bananas and occasionally a raspberry. Won't drink juice or smoothies. He's dairy intolerant which limits things further. I'm going with it, not offering alternatives and hoping he magically grows out of it.

My 5 year old loves fruit, and salad veg and some green veg. Still limited but gets a balanced diet.

Have a 5 month old so will start weaning him next month. I'm thinking very carefully how to approach this. Considering BLW with a wider range of foods rather than purees which I did with the others.

Tried those carrot "crisps" and while I thought they tasted good, both my kids did not like :( boo But at least he at the pizza w pureed carrots and green beans! This weekend will try family meals and no alternatives. Cross fingers he will start to eat what we eat. I know it will take some time.
