Gripe water for my DS - he got a wee blissed out look on his face when he took it!

Neither. They just make you feel like you are doing something. Better to massage his tummy.

We used Infacol when out and about and it did seem to work but we also made our own gripewater with crushed fennel and cardommon seeds - just add hot water, stir and allow to cool (pour into cup/spoon through tea strainer). That will bring up a good burp/trump or two and is much nicer (tastes like fennel tea) and is not full of scary sounding ingredients and sweeteners!

It could be lactose overload which is very common in babies and is because their gut is too immature to fully process the milk they take in (whether breast or formula-fed). It usually passes within a couple of months or so.
Medication won't help, but tummy massage and leg cycling definitely frees up the trapped wind.
Also, if you're breastfeeding, stick with one side for up to four hours before switching to the other. That should help.

what are the symptoms?

If it's trapped burps then the best thing is to feed them sitting bolt upright and wind them every couple of minutes.
