Hi,

Quick and easy:- (once the potatoes are cooked.

Make some jacket potatoes, cut them in half and take out all of the potato....mix with one pack of boursin cheese and put all the filling mix back into the potato skins. Chop a leek finely and sprinkle a few bits on the top of the potato and place in oven for a short while until the leeks are crispy.....these are delicious hot or cold. PS you can get boursin with black pepper

My dish for these occasions is 'seven layer dip' - an American/Mexican concoction. No one ever brings anything similar and most people like it.
