Quick q about use of 'Prof Sir' . . . . . . it will be quick I promise!!

I am seending an invite out about a dinner and the speaker is a 'Prof Sir', which is fine. In the letter itself I don't want to use his surname so do I still call him Prof Sir, or just Sir?

Boring I know!

I think it's Professor Sir Englebert Humperdinck on the envelope and Dear Sir Englebert on the invitation. I think Sir takes precedence over Prof - otherwise it would be Dear Professor Himperdinck.

Thanks. That was my first thought which I then dismissed. But it sounds right iykwim. I will go with that!
