Baked sweet potatoes are nice or what about sweet potato mash, mixed half and half with mashed ordinary potato.

Colin likes it when I make "fries" out of them by cutting them into wedges and coating with beaten egg white and placed on a olive-oil coated cookie sheet at 400F for about 20 min.

I mash them a lot, and my DD likes that. They work well in soup too.

I am also trying to figure out a way to work them into a quiche because I had an amazing sweet potato and parsnip quiche once.
