You could phone a florist in her area direct and tell them your specific instructions.

I had to do this when getting flowers sent to a dinner dance at a castle, I was worried they would arrive through the day and get looked in an office, or be left out where the recipient would see them before they were ment to.

Tesco had space for delivery instructions I seem to remember

We had flowers delivered to my sister. She lives in flats and was out when they arrived. they left them in the landing. that was Next and we gave no instructions

Just ordered some flowers from Tesco and they definetely do allow you to give specific instructions
