Banana Cake!!

Hi!

Has anyone got a good recipe for banana cake and where can I find it?

It's my ds' birthday in a few weeks and I would love to make banana cake for his birthday party as he's not too hot on the chocolate variety because of his eczema.

There's a recipe in Nigella Lawson's goddess book but it has walnuts and alcohol and salt in and I am a bit worried that if I remove all of those ingredients her recipe might lose a bit!

this is just soooo foolproof I let my kids make it. if you put it in a bread tin you have banana load, if you put it in bun tins you have banana muffins.It's originally for a loaf so I'd guess at 6-8inch cake tin. It also freezes extremely well. For variation you can add choc chips.

4oz (100g) soft maragarine
6oz (175g) castor sugar
2 eggs beaten
2 ripe bananas mashed (the blacker the skins the better!!!)
8oz (225g) self-raising flour
1teaspoon baking powder
2 tablespoons milk
Heat oven to 350F 180C or Gas 4.
Grease and line a 2llb (900g) loaf tin with greased greaseproof paper.
Cream the margarine and sugar unitl light and soft, then beat in the eggs and mashed bananas.

soft the flour and baking powder together then fold with the milk into the creamed mixture.

pour into prepared tin and bake in the centre of the oven for 20-30 mins...poke iwth a skewer or knife. If it comes out with cake mix sticking to it ...put back in the oven for a good 5 minutes.

Tinkerbell, Blue Peter made one this week, its probably on their website. It was cooked in a loaf tin (I think). I only half watch BP!!

Thank you both - I shall do a dress rehearsal I think before the big day. I'll let you know how the cake making goes...bit terrified, never been my strong point!!

Tinkerbell - what other food did you do . I've twins 5th birthday party on the 18th and I wasn't going to do sandwiches as they never seem to get eaten, and I'm struggling for savoury (can do cakes & choco crispies til the cows come home!)

helenmc - sorry, no help here, it was a 1st birthday party so range of food was somewhat limited! but I found that the smoked salmon sandwiches and champagne we treated the mums to went down a treat!!

oh, and SueW, maybe you can 're'-find the recipe on the internet via the newspaper's website? I'll have a try at that too as it sounds goooood!
