Help - Different Fillings for vol au vents........................

Hello All,

I am wondering if I could possibly pick your brains.

I am having a charity night on Friday (all proceeds go to the 'Meningitis Trust' and I'm doing a buffet.

I want to do some vol au vents but have never done them before and the only 2 fillings I have come up with are prawns in seafood sauce and tuna mayo and sweetcorn.

Does anyone know of any other quick and easy fillings that I could use.

Thanks and I'll post on Saturday (Hangover Permitting) how much we managed to raise.

cooked chicken pieces mixed with campbells cream of mushroom soup plus a little lemon juice and white pepper

Marscapone and creme fraiche mixed with chopped sundried tomatoes, pureed skinned red peppers and garnished with finely chopped herbs

don't dillute the soup, leave it thick as a binding agent by the way

How about coronation chicken?
Chopped egg and anchovy
Roast beef and horseradish
Mexican ones with chile con carne, sour cream, salsa
