Mum used to make this. Can't remember the ratios, so maybe not much help, but know the main liquid is made up of passata, soya sauce, vinegar, and vegetable stock. Also much sugar, onions, pineapple and peppers. Vaguely helpful?

Depends what type you want but the main ingredients are sugar and vinegar - everything else is just background flavour. Bad chinese restaurants sometimes just use pineapple juice, vinegar and cornflour - yeuchhh!

I use:

250 ml stock
2 tsp arrowroot powder
juice from 1 tbsp grated ginger (just squeeze the grated ginger in your hand over the bowl/jug)
2 tbsp soy sauce
1 tbsp white wine vinegar
honey to taste (about 2 tbsp)
