How about:

sticks of celery
dried fruit, mine love apricots, dates and prunes
cheese and pineapple
grapes
cold chicken/ham/roast beef
bread sticks

Are you going to put it on platters and let parents help the children to it, probably far less effot than sticking it all in party boxes.

Your original list sounds fine to me - I have always been amazed at how poorly many children eat so you may find that it is only your ds that eats the pepper - but still have it if he loves it. I would do some simple sandwiches maybe only three different tyes i.e. marmite, cheese and ham. The other thing that often goes down well is plain red jelly - no custard or fruit just jelly. I usually a large tub (tupperware type or ice cream tub) of chopped jelly - easier to transport than individual jellies. Also, cold chicken nuggets or chicken strips always seem to go down well too.
