Veggie Christmas

Can anyone help me with a fantastic recipe idea for veggie christmas dinner. Pref something I can make a day (or even two) before so I can put my feet up on the day itself....... This is only the third Xmas I have 'hosted' and I want to make as easy (but tasty) as possible!

I did a vegan Xmas dinner once:

A version of a steak and kidney pud, but with a filling of gorgeous big field mushrooms in a very rich red wine sauce. It looked spectacular all steaming and garnished on the plate...you could even set fire to it like a Christmas Pud!

make the pastry with vegetarian suet (available in tesco etc), add loads of herbs to it (v finely chopped, fresh), line basin in usual way, I made up the filling recipe, but probably fried rough cut mushies, garlic and red onions, thickened red wine and some tasty veg stock with cornflour, added more herbs and lots of balck pepper) cover seal and steam in the usual way...probably for less time than S&K pud, but not too short, serve with roasties, roast veg, and some light greens such as mange-tout.

SAuce needs to be really rich. Pack it with mushrooms and don't stint on the wine.

I have recommended this book on another thread: Rose Elliot's "Vegetarian Christmas" is really good and still in print. It has several suggested menus and also lighter meals for guests staying for a few days, and timetables about when to start making what in advance.

Thanks - the steamed thing sounds yummy. Will see if I can get the rose Elliott book too.
