really delicious xmas veg

what are your fave xmas veg recipes? am looking for really delicious vegetables this year not the usual bland stuff.

I'm lazy... I always bung in a large roasting tin of courgettes, carrots, onions, garlic, herbs and whatever other vegetables I fancy tip over some olive oil and shove them in the oven and forget about them.

i love doing oven roast veg with butternut squash, peppers, courgette, carrot, mushroom and cherry tomatoes

also love red cabbage though I think it goes better with ham than trukey so often do it on Christmas Eve (when we often have ham).

i loathe sprouts, but feel the need to cook them for others so usually add bacon/chestnuts/walnuts or some combination of those things!

put in roasting tin and cover with honey and then roast...mmmmh delicious!
