Recipie says to put the cookies on a tray on greaseproof paper but I don't have any, does it matter ??

No - I never do it. Not entirely sure what it does tbh!

no as long as the tray is buttered/greased

I use greaseproof paper if I'm making something very sticky/doughy as it's easier than chipping all the bits off the tray afterwards!
