so whats the supposed staff ratio to child for over 1's? and whats usually the actual?

i hear they can count staff being with children when its thier nap times etc so it could be one worker for ? how many children?

Do they include the chef

The new EYFS actually states for the first time that if children are asleep then staff can be on premises but not necessarily in same room. (not left alone though)
