1. How often do you make sandwiches for yourself and/or your family?
Probably most days. My DH will always have a sandwich for his lunch, and counts them as one of his favourite foods! Me and DD will typically have one say 4 times a week.
2. How many different types of sandwich filling do you have in one week
For DD and myself we will probably have a different one each time as I get bored easily and I like her to have variety (she is only one). DH will tend to have the same fillings most of the time.
Typically fillings for me and DD would be tuna mayo, chicken salad, egg mayo, ham and mustard, cheese and tomato, marmite and cucumber, cheese and apple. Really whatever is in the fridge! She also loves jam sandwiches but we try not to make a habit of that!
DH will normally have cheese and salad or chorizo and tomato.
3. Do you make sandwiches the night before or are you an early riser?
We always make them on the day. DH will normally make his own before work. If he is short on time he will throw the components into a tupperware pot and make it up when he is ready to eat it (although as he doesn't have butter or any other spreadable like mayo or chutney when he does this he tries not to!). I work from home so will make it up as I need them. If I am out at meetings or in the office I don't tend to have a sandwich.
4. What are your hints and tips to keep your bread fresh?
We keep it frozen and take out slices as and when we need them. They defrost really quickly. Occasionally we have a fresh load and when making sandwiches to take out I think they need to be really well wrapped. I hate the bread when it starts to harden.
5. What ideas did you/ your family come up with for using leftovers in sandwiches? What worked well/ what didn’t work out so well?
Most of the time we don't have leftovers as we tend to eat what we cook. This does result in us sometimes eating portion sizes that are on the large size! For this challenge I decided to try and save some food purposely to make sandwiches with rather than load up our plates. This wasn't necessarily strictly leftovers as I didn't use it in the first place.
For example, we had a chicken and rocket risotto this week. Normally I would use a whole packet of chicken and the leftover rocket (as we only used half a bag) would sit in the fridge until it was eventually moved to the bin having formed into a green sludge. Instead I kept back some of the chicken (making our portions smaller) and used that with the left over rocket in sandwiches. To make them a bit more special I roasted a butternut squash in the oven, cut into chunks with some chilli flakes and thyme. This was mixed with the chicken and rocket along with some feta I had left over from a meal earlier in the week. I used warm flatbreads to make a really yummy folded wrap, spreading a bit of mayo onto the flatbread and topping that with the mixture (just a smear for me but quite a bit for DH as he loves it). See photo attached. I should hasten to add I am never normally this inventive!
6. Do you have a favourite sandwich you already made regularly with your leftovers?
Not sure about regularly but you can't beat the post Christmas Day turkey, stuffing, bread sauce and cranberry sandwich!
Another one that we do on a regular basis with with left over chicken from a roast. We shred it up with some celery cut quite thin and spring onion (again cut into fine rings). We mix with a few tablespoons of mayo and grated cheese and pop it in the oven so the cheese melts and the celery cooks (DH hates it raw).
We then have use this as a sandwich filling but as a main meal sandwich if that makes sense. It is really tasty!
7. After taking part in the challenge do you think you will be more inventive in your sandwich fillings featuring Hellmann's Mayonnaise?
Yes I think I will (at least in the short term). I'm already planning to use it to bind together some left over chargrill vegetables (that we will be having tonight) to use in sandwiches tomorrow lunchtime.
