This thread is for the 30 Mumsnetters who took part in the Hellmann's 'Sandwich of the Century' challenge as part of their

Non-testers: Hellmann's would love to know if you use leftovers in your sandwiches. Do you regularly use your leftovers in a sandwich for lunch the next day? If you don't, do you think it’s something you'd try? Every non tester who adds their thoughts will be entered into a prize draw to win a Hellmann's hamper worth £50.

Here's what Hellmann’s have to say, "For 100 years, Hellmann's Mayonnaise has been at the heart of the greatest Sandwiches but did you know that every day we throw away 200,000 loaves of bread and are even careless with our fillings for example, nearly three million tomatoes, and one million slices of ham are disposed of and not eaten?! At Hellmann's, we love food and we believe eating should be a moment of joy. That's why we hate food waste and are now encouraging you to use your lovely leftovers!"

Testers were sent some Hellmann's mayonnaise along with a welcome pack.

Testers: We've got a set of questions we'd like you to answer about making sandwiches and how you found the Hellmann's challenge. Please also feel free to add any other thoughts you may have.

Non tester - it's not a regular thing as we are making a concerted effort to only cook as much as we need and the leftovers we have wouldn't normally be found in a sandwich (pasta, cauliflower cheese, brussel sprouts). We do use leftovers roast beef or roast chicken or turkey when we have it.

  1. We make sandwichs/wraps about four days a week.
  2. Usually about two or three different fillings each, except DS who loves ham.
  3. I hate soggy bread so usually make as required. I'll often make the filling the night before.
  4. To keep bread fresh I avoid making up sandwich until last minute possible. I'll often leave off wet fillings (tomatoes, sauce) and keep them in seperate tub.
  5. Using leftover sausages worked really well with boiled egg became a bit of a breakfast sandwich. Also, we used bits of meat from leftover meals so chicken curry, gammon steak, turkey burgers. Using the mayo as a mixer made for some interesting combinations, many which worked well on wraps as opposed to bread.
  6. Favourite leftover sandwich is when we have Greek salad or roasted veg (peppers, courgettes) the night before. Add a bit of pesto to a sandwich and it's amazing!
  7. It was great to be 'forced' to become more creative and use up more leftovers so thank you! I also enjoyed using mayo for a change as I usually buy salad cream.

However I feel I'll only use mayo/salad cream when in the house as I found it made sandwiches a bit too soggy.
Having rediscovered how much of a treat a chip and mayo roll is has been worth it!

Should add; our mayo just arrived this morning. I didn't get an email to say I had been selected but I kept thinking about mayo so went out and bought some last week!

  1. How often do you make sandwiches for yourself and/or your family? Every week day and usually on a Saturday. DH gets a packed lunch. DS and I have lunch at home or on the go.
  2. How many different types of sandwich filling do you have in one week? DH has a mixture of two kinds, DS more variety and I stick to one or two varieties.
  3. Do you make sandwiches the night before or are you an early riser? NIght before for packed lunches. As and when for home lunches.
  4. What are your hints and tips to keep your bread fresh? Freeze your loaf and use as needed.
  5. What ideas did you/ your family come up with for using leftovers in sandwiches? What worked well/ what didn’t work out so well? We have done sweet chilli chicken, chicken, red pepper, mayo and sweet chilli sauce. Cranberry chicken, chicken, cranberry sauce and mayo. We liked them all. Roast beef, roast beef with horseradish sauce, fried onions and mayo. Not so keen on this one.
  6. Do you have a favourite sandwich you already made regularly with your leftovers? I use leftover chicken in all of my own sandwiches.
  7. After taking part in the challenge do you think you will be more inventive in your sandwich fillings featuring Hellmann's Mayonnaise? We were more creative with the mayo and will continue to be.

I've never tried a lasagne sandwich, and to be honest, I'm not going to start now. Any leftover roast meats are great in sandwiches. I regularly boil a ham, and use the leftover ham in sandwiches. Either ham and homemade chutney or haw with rocket and mayo are my favorites.
DH likes cold roast potato and marmite sandwiches. He says they taste really meaty. Confused

Ds loves to have a meal of leftovers, sometimes I manage to get there first and have them for my lunch - so leftover cold meats, sausages, hardboiled eggsetc perhaps with some salad and some chutney or some Hellmans.

Leftovers are great for meals at work. I'm lucky enough to have a nice kitchen re reheat and eat in where I work and on Mondays I have another Sunday lunch made of leftovers - perfect for cheering up a Monday! My favourite sandwich is roast chicken with real butter on the spread and some salt, lovely!

I make sandwiches for myself as work packed lunch and for children.
Use what ever we have in the fridge leftovers
One of my favorites is a tomato and onion sandwich with a drop of vinegar.
Children like nearly anything but yesterday they had left over roast lamb with some mint sauce.
I've been known to put curry and even chilli con carne in a sandwich if it is what we have as left overs
I try to be adveterous with fillings. I get quite bored with lunch if they are repetitive .
Try to add a little salad whenever we gave a sandwich.
Often use extra light cheese spread, mayo or salad cream as a substitute for butter.
I always make sandwiches night before as I'm up a 4:30am for work.
Keep bread fresh by leaving it in freezer it's things like hovis or kingsmill and get slices out as we need them .
Fresh bread like tiger loaf ect get put in a food bag and placed in the bread bon to keep fresh.

One of the things I'm looking forward to about Christmas is leftover-sandwiches.

We have turkey and ham, which go lovely together cold with stuffing, salad, cranberry and a big dollop of Hellman's mayonnaise. Mmmmm.

I could eat one right now.

Non-tester. I use meat from the Sunday roast to make a tasty stew the next day, with barley, lentils and lots of assorted veggies thrown in.

Non tester here

We try not to throw away food where possible. Best use of our leftovers is usually from a Sunday roast so chicken/beef/lamb for sandwiches next day. If we have salmon fillets for tea with potatoes & veg, any leftover salmon and potatoes makes a lovely cold salad the following day for lunch just add some chopped spring onion and bind with mayo! Delicious :-)

Tester here, thank you for letting me be a part of this.

1. How often do you make sandwiches for yourself and/or your family?
Probably most days. My DH will always have a sandwich for his lunch, and counts them as one of his favourite foods! Me and DD will typically have one say 4 times a week.

2. How many different types of sandwich filling do you have in one week
For DD and myself we will probably have a different one each time as I get bored easily and I like her to have variety (she is only one). DH will tend to have the same fillings most of the time.

Typically fillings for me and DD would be tuna mayo, chicken salad, egg mayo, ham and mustard, cheese and tomato, marmite and cucumber, cheese and apple. Really whatever is in the fridge! She also loves jam sandwiches but we try not to make a habit of that!

DH will normally have cheese and salad or chorizo and tomato.

3. Do you make sandwiches the night before or are you an early riser?
We always make them on the day. DH will normally make his own before work. If he is short on time he will throw the components into a tupperware pot and make it up when he is ready to eat it (although as he doesn't have butter or any other spreadable like mayo or chutney when he does this he tries not to!). I work from home so will make it up as I need them. If I am out at meetings or in the office I don't tend to have a sandwich.

4. What are your hints and tips to keep your bread fresh?
We keep it frozen and take out slices as and when we need them. They defrost really quickly. Occasionally we have a fresh load and when making sandwiches to take out I think they need to be really well wrapped. I hate the bread when it starts to harden.

5. What ideas did you/ your family come up with for using leftovers in sandwiches? What worked well/ what didn’t work out so well?
Most of the time we don't have leftovers as we tend to eat what we cook. This does result in us sometimes eating portion sizes that are on the large size! For this challenge I decided to try and save some food purposely to make sandwiches with rather than load up our plates. This wasn't necessarily strictly leftovers as I didn't use it in the first place.

For example, we had a chicken and rocket risotto this week. Normally I would use a whole packet of chicken and the leftover rocket (as we only used half a bag) would sit in the fridge until it was eventually moved to the bin having formed into a green sludge. Instead I kept back some of the chicken (making our portions smaller) and used that with the left over rocket in sandwiches. To make them a bit more special I roasted a butternut squash in the oven, cut into chunks with some chilli flakes and thyme. This was mixed with the chicken and rocket along with some feta I had left over from a meal earlier in the week. I used warm flatbreads to make a really yummy folded wrap, spreading a bit of mayo onto the flatbread and topping that with the mixture (just a smear for me but quite a bit for DH as he loves it). See photo attached. I should hasten to add I am never normally this inventive!

6. Do you have a favourite sandwich you already made regularly with your leftovers?
Not sure about regularly but you can't beat the post Christmas Day turkey, stuffing, bread sauce and cranberry sandwich!

Another one that we do on a regular basis with with left over chicken from a roast. We shred it up with some celery cut quite thin and spring onion (again cut into fine rings). We mix with a few tablespoons of mayo and grated cheese and pop it in the oven so the cheese melts and the celery cooks (DH hates it raw).

We then have use this as a sandwich filling but as a main meal sandwich if that makes sense. It is really tasty!

7. After taking part in the challenge do you think you will be more inventive in your sandwich fillings featuring Hellmann's Mayonnaise?
Yes I think I will (at least in the short term). I'm already planning to use it to bind together some left over chargrill vegetables (that we will be having tonight) to use in sandwiches tomorrow lunchtime.

We're kinda boring and have cheese in our sandwiches most days. The only time we use leftovers is if I've done a roast dinner (beef) as we never get through it all. But I only do about three roasts a year (poor DH!).

non tester - Would love more ideas about what to use in leftovers as in theory i'm happy to but only some foods lend themselves to be put in sandwiches as leftovers so i'm open to new ideas.

Hellmanns mixed with horseradish with leftover roast beef is a popular sandwich in our household.

Best use of left-over chicken in our family is MIL's gorgeous coronation chicken which uses mayo in it.....fantastic as a sandwich filler and always the first type of sandwiches to be finished off in her house when she has a 'do'!

My favourite sandwich ever is chicken or turkey shredded and mixed with Mayo and sweet corn, lovely if we have a roast at lunch time and the use the leftovers for sandwiches for tea :)

Non tester;

Left over nut roast with salad in warm fresh bread- yum. Obviously needs some mayo or cranberry sauce so it's not dry Smile

We love left overs as a salad or in sandwiches for packed lunches.

I only eat sandwiches 2 or 3 times a week, at most, as I don't like to eat a lot of bread. The boys have them most days, though.

I might have the same thing, every time or have something different in each sandwich.

I make them the night before for the boys' packed lunches. There's already too much to do in the morning, when I'm not at my best and it gives them chance to chill down so the fillings don't go off.

Just don't buy or bake more than you need. I have a big lock'n'lock box for non-packaged bread. It doesn't keep crusts crispy, but it stops the rest from drying out.

I had visitors, last week, so did a buffet tea, once day. I made DH a sarnie with leftover roast ham and coleslaw, the other day, which went down well. I ended up not using the tub of prawn cocktail I'd bought, so piled that in a sandwich with lots of cucumber. It wasn't easy to eat, but was very tasty. We still have a bit of the ham and cucumber left to use up and I have leftover roast chicken. A loaf i bought on Friday is past its best, so I made DS2 a ham and cheese toasty for his lunch, today. Even though he likes the ham, he left it! I made myself a chicken ham and cucumber sandwich, with lots of mayo, with some fresher bread. I've uploaded a rather blurry picture of today's sandwiches (The light's not right good, today!) ETA Or rather, I was all set to, but this thread's been posted on the wrong board!

Ham and fried egg. Mmmmm! (with mayo under the ham, for me, though DS1 prefers it plain, as he hates mayo)

I'll still not eat a lot of bread, as it bloats me, so probably not. (I do prefer mayo to ketchup on my fish and chips, mind!)

Non-tester.

Our family is just me, DH and our two very small children so we don't cook big joints of meat and don't tend to have sandwich-friendly leftovers. I'll definitely do it once the children are big enough to make it worthwhile cooking meat joints and really look forward to yummy ham/beef/lamb/chicken sandwiches! My absolute favourite is chicken and stuffing and shop-bought never tastes as good.
