This thread is for the 30 Mumsnetters who took part in the Hellmann's 'Sandwich of the Century' challenge as part of their

Non-testers: Hellmann's would love to know if you use leftovers in your sandwiches. Do you regularly use your leftovers in a sandwich for lunch the next day? If you don't, do you think it’s something you'd try? Every non tester who adds their thoughts will be entered into a prize draw to win a Hellmann's hamper worth £50.

Here's what Hellmann’s have to say, "For 100 years, Hellmann's Mayonnaise has been at the heart of the greatest Sandwiches but did you know that every day we throw away 200,000 loaves of bread and are even careless with our fillings for example, nearly three million tomatoes, and one million slices of ham are disposed of and not eaten?! At Hellmann's, we love food and we believe eating should be a moment of joy. That's why we hate food waste and are now encouraging you to use your lovely leftovers!"

Testers were sent some Hellmann's mayonnaise along with a welcome pack.

Testers: We've got a set of questions we'd like you to answer about making sandwiches and how you found the Hellmann's challenge. Please also feel free to add any other thoughts you may have.

keep in the fridge plus there is not time for bread to go off in our house!

i tried using cold meats more from previous evening meals, we had pork with mayo, chicken salad and mayo, egg mayo and tuna mayo were new.
  1. Do you have a favourite sandwich you already made regularly with your leftovers? it use to be chicken and mayo but i did enjoy the pork one.

Tester here - thanks for the mayo.

  1. everyday sandwiches are made.
  2. 3 different fillings a week.
  3. we are early riser makers. I don't like fridge cold sandwiches
  4. I don't do anything special to keep bread fresh. I just make sure the bag is sealed.
  5. we have purchased a sandwich toaster so have been experimenting with that. Sunday roast meat leftovers with mayo has been a firm favourite. We did have a go with the veg but it wasn't do successful as it was a bit soggy!
  6. sausage is a favourite left over sandwich. Also chicken and stuffing. I also like spaghetti bolognese sandwich with mayo (no I'm not pregnant!)
  7. it would make me consider mayo instead of automatically going for the red sauce instead.

Non tester. Often have left over meat (roast beef / chicken etc ) or sausages in sandwiches. Other leftovers I usually have heated in microwave on days I am home for lunch. Bolognase, pasta salad, curry etc

How often do you make sandwiches for yourself and/or your family?
I get a free lunch at work, so don't make sandwiches for myself. DS1&2 Monday-Thursday, DS3 Monday and Friday, DH Monday & Tuesday. So every day for someone.

How many different types of sandwich filling do you have in one week?
Generally we are very uncreative with our fillings. Marmite/Cheese/Ham (cheese and ham always with Mayo).

Do you make sandwiches the night before or are you an early riser?
Definitely the night before. It is far too much of a rush in the morning. By Friday when it is just DS3 I am tempted to leave it to DH in the morning and just leave early to avoid the chaos.

What are your hints and tips to keep your bread fresh?
We use wraps and bake our own. Mostly wraps for packed lunches, they are so easy.

What ideas did you/ your family come up with for using leftovers in sandwiches? What worked well/ what didn’t work out so well?
Over half term we have discovered that you basically, you can pretty much put anything into a wrap. We've had breakfast sandwiches (egg, bacon, beans and mayo) with leftover beans, we've had cold chilli wraps with mayo and cheese - they always work well, left-over gammon in a sandwich. Lamb meatballs, shredded lettuce and mayonnaise was a delicious option. A friend convinced us to try chocolate spread and mayonnaise. It was odd, but surprisingly not disgusting. I tried the lasagne but it was really a sandwich on its own.

Do you have a favourite sandwich you already made regularly with your leftovers?
Cold chilli and sometimes, if there is any left, cold curry. Any leftover Sunday roast but alas there aren't many leftovers these days. Any leftover bits of apple go into an afternoon sandwich with chocolate spread now (not with mayo though).

After taking part in the challenge do you think you will be more inventive in your sandwich fillings featuring Hellmann's Mayonnaise?
I would love to say yes, but the jar of Marmite is just so handy! I think I might set myself a challenge of being more creative just once a week. That I might be able to manage.

Thank you for the Helmanns mayo, we are already a big fan of it and this was a little treat to our love towards Helmanns.

  1. How often do you make sandwiches for yourself and/or your family?

Atleast 4 -5 times a week. It is the most easiest and quickest lunch I can pack.

  1. How many different types of sandwich filling do you have in one week? Varies based on what we have at home as a filling to make sandwich. I have learnt to stuff it with the leftover vegetable mix curry if I make any. Otherwise it is usually few vegetables and cheese.


  1. Do you make sandwiches the night before or are you an early riser?

It is usally in the morning because I try to use the left overs if any from the previous day dinner. And I feel that is atleast a little fresh and than making it at night. It is meant to be a quick packed lunch and I dont see a point in making it at night!

  1. What are your hints and tips to keep your bread fresh?

I try to retain the packaging intact as much as possible and seal it nicely. Once it is almost close the expiry date, I keep it in the fridge tightly sealed. Works fine so far atleast for 5 days unless I forget it in the fridge for a week.

  1. What ideas did you/ your family come up with for using leftovers in sandwiches? What worked well/ what didn’t work out so well?

Leftover chicken with Hellmans mayo and sweet chilli sauce
Leftover lamb curry with Hellmans mayo and tamrind chutney
Leftover vegetable mix curry.
Bread, Hellmans Mayo and ketchup ( my daughter likes it.. not me though)

  1. Do you have a favourite sandwich you already made regularly with your leftovers?

I love the Sandwich I make with the Peas, Carrot curry I make.

Ofcourse, I alread think sandwich is a great invention to reduce left overs. With Helmanns Mayo the adventure begins.

I had to sign for the package at the post office so sorry I'm late to the thread.

Very other day, it's the one snack everyone likes.

  1. How many different types of sandwich filling do you have in one week?


I buy pre made fillings as well as ham and cheese for ease but always add may, even toasted sandwiches have a squeeze of mayo on the side.

  1. Do you make sandwiches the night before or are you an early riser?


The night before or freeze rolls filled with BBQ pulled pork that can be heated in the microwave at work.

  1. What are your hints and tips to keep your bread fresh?


Same as Rishi :

I live mayo with chips, fish fingers, bacon - all with mayo --and added ketchup/salad cream.

I make them every day. Its one of my daughters and husbands favourite foods. We usually have them at lunch time.

We are usually really boring. Me and dd, usually either have cheese, ham, (sometimes with some salad inside)or jam.

  1. Do you make sandwiches the night before or are you an early riser?

Early riser! They don't seem as fresh to me if they are made the day before. Plus anything like cucumber or mayo in the sandwich the night before might make the bread yucky and wet!

  1. What are your hints and tips to keep your bread fresh?

Keep the sticky tie to keep the bread sealed and we also freeze what we don't think we will use.

  1. What ideas did you/ your family come up with for using leftovers in sandwiches? What worked well/ what didn’t work out so well?

Bolognese sandwich, and curried vegetables sandwich ( dh likes these but not me or dd). We both liked Stuffing, mayonnaise and chicken. Sausages, salad and mayonnaise works well too. Any leftovers like fish fingers are good in a wrap with salad and mayonnaise.

My parents in law always have left over meat in their fridge, so often when we go there, we have cold meat sandwiches ( eg cooked ham etc) with a bit of chutney.

Yes, a lot of our leftovers used to go in the bin. But since the challenge, and my morning sickness has kicked in, there's been a lot more left and i have more ideas. So I will be putting a lot more left overs in the fridge for sandwiches now :)

Non Tester...

The only left overs we have are from the sunday roast which either go into sandwiches or a curry over the following couple of days. Sometimes I do enough pasta for a cold pasta salad lunch the following day but the meals we have aren't really meals we get left overs from... I buy and cook what we need.

I love turning leftovers into interesting salad/sandwich combinations, but sadly my group of gannets lovely dcs don't always leave enough to work with Grin

Favourite combo is chicken, salt beef, pickled cucumbers, Hellmans, mustard, hoummous, sliced tomato and lettuce all on homemade granary or rye bread.

I always use leftovers in sandwiches - I'll put just about anything in a sandwich. My favourite is leftover roast meat especially chicken or turkey with stuffing or bread sauce. I also love roast potato sandwiches! Chip sandwiches (chip butties!) are brilliant with Hellmans. My husband likes chip butties with ketchup but mayo is much better!

im super frugal now,

i boil a gammon for dinner, the leftovers can be used for ham and mustard, ham and salad and ham and cheese sandwiches or toasties and i use the stock and freeze it for casseroles.

leftover chicken, = coronation chicken and sweetcorn with a wee bit of chuttney or onion relish

if my eggs are about to go out of date, its egg and onion sandwiches with mayo and black pepper, or egg and chopped up bacon or ham, or egg and grated cheese

mushrooms are brill if made into a toastie with some cheese or ham or whatever is left in the fridge

And dont throw away your old bananas. they are lovely with a seeded or granary bread , try banana and nutella the kids will love them

Waste not want not in my house!

As a quick and easy lunch - I've found adding some types of curries into sandwiches along with some salad are delicious. Either regular sandwiches or ones made in a sandwich toaster are fab depending on the time of year - need to get a sandwich toaster now it's colder.

Mince, shredded chicken, lentils and hummus are some of my favourite sandwich fillings with the traditional tuna/cucumber & mayo with a little salt/pepper.

Bread machine runs most nights. We have sandwiches with leftover roast meat/home cooked ham/meatloaf for lunch most days. DH has to have mayo, I have to have it dry.

Hello, Tester Here,

  1. I make sandwiches about five times a week, usually for a quick lunch.

  2. I have a different filling each day, so five types of filling.

  3. I make sandwiches on the day, but if it is tomato and mayonnaise (a special favourite of mine) I make it a few hours ahead, as I like it to have gone a bit soggy, or to use culinary terminology, to let the flavours develop and mingle.

  4. I keep bread in the fridge to keep it fresh, and usually also have half a loaf or so in the freezer for emergencies.

  5. Some ideas that I used:
    A chicken, rice and lentil salad with Hellmann's to bind it together, worked well as a filling.
    Left over broccoli aspagagus and spinach chopped and mixed with Hellmann's was tasty, but would have worked better in a wrap than in bread.
    Leeks, diced ham and Hellmann's worked well.
    Potatoes mixed with spring onions, thinly sliced sausage and Hellmann's was surprisingly good.
    Other favourites using mayonnaise were fried egg or omelette, left over roast chicken, salmon and cucumber.

  6. Yes, my all time favourite is egg mayonnaise with ham or bacon, often made with the last egg and the last rasher in the world!

  7. Yes, it's years since I had Coronation chicken so will be having that soon, and am thinking of smoked fish with mustard and mayonnaise. I'll by trying the mayonnaise and chocolate spread too, and might add some peanut butter.
    I'm also going to try a wider variety of bases, such as wraps and bagels.

    I've enjoyed being a tester for the first time, so thank you.
    I liked the novelty of the new bottle / lid gizmo, but thought they would work best as an on the table dispenser, but will stick with the jars myself, as so simple to spoon out just how much you need.

I'm a non-tester and we regularly use leftovers in sandwiches. I keep the plastic containers from our takeaways to keep offcuts of chicken or beef to put in sandwiches - and tuna with Hellmans is a staple sarnie filling for us.

I actually prefer leftovers in sandwiches to fresh ingredients, they have much more flavour. So...we do this alot! Especially chicken, it's obvious but goes so well with butter and mayo and tastes delicious!

I love leftovers in sandwiches. Any roast meat & veg will do, with a little bit of rocket, a heaped tablespoon of mayo mixed with smoked chilli paste or pesto, a squeeze of lemon, olives or green grapes, or pickled gherkins. The choices are endless. Whatever herbs I have or salad leaves, sometimes it is paired with cheese.

unfortuntely we do not use mayonnaise in sandwiches as dd is allergic to egg. I do miss it though.

I make sandwiches everyday for dd. usually a varition on cheese or soft cheese or chicken. ds has left over tea in a pot, but sometimes sandwiches for breakfast or tea and at the weekend.

sandwiches are made in the morning.



roast chicken left overs are great in sandwiches, as is roast pork.

soft tomatoes go into the tea to make pastaa sauce.

We use leftovers but not all of them - things like chicken I turn into chicken salad and put into a sandwich for next day lunch.. or any other meat for this matter
I guess we should re-use more, but we also have dogs, so a lot of food which we don't eat on the spot is shared with them

Do you regularly use your leftovers in a sandwich for lunch the next day?

No.

If you don't, do you think it’s something you'd try?

I really think that it depends on the quality of the leftovers. Fishfingers, for example, would make a fab left over sandwich but we seldom have leftover fishfingers. Random rice and frozen veg that the family has declined to eat the night before often doesn't appeal even to me as a filling for my lunch sandwich.

We don't use leftovers in sandwiches as we don't usually have any as we tend to get our portions just right. Loving some of the ideas on this thread though!

Non tester here, but we don't tend to use leftovers in sandwiches. We'll often cook enough dinner and have the same for lunch the next day.
