This month - the Many Faces of Potatoes campaign is offering a £50 Love2Shop voucher to MNers offering a tip or spin on the November recipes - see this link for recipes and info

This thread is for the 15 MNers who are trying out potato recipes for the "Many Faces of Potatoes campaign" over the next few months. Each month they will be sent a new family favourite recipe which can be prepped and on the plate in under 30 minutes. The MNers will add their feedback to this thread.

Below are some questions for the Councillor's to answer each month - please feel free to add additional comments.

If you're not a tester but have any queries feel free to ask and maybe a Councillor will answer, or if not one of the MNet campaign team will.

and a tip for making better mash is to heat the milk first before adding to the potatoes to mash Smile

~ How long did it take you to cook the recipe?
About 40 mins

~ Did you and your family enjoy the recipe?
It was nice, a bit greasy, and not much for 4 people!

~ Will you be cooking it again?
Yes but will use more mince and use different or less oil

~ Any other general comments about the recipe?
Good recipe, tasted nice but as said above less oil and more mince

Sausages with swede and carrot mash.

~ How long did it take you to cook the recipe?

about 30 minutes, I suppose. The time it took to boil the potatoes and veg.

~ Did you and your family enjoy the recipe?

we did. I liked it. I have eaten veg mash before, but not usually mixed with potato too. It was much nicer all mixed up. I am not a fan of eg carrot mash on its own. The veg gave a depth to the mash, and added a bit of texture. dh liked it too. less than me, but quite happy with it. dsd liked it - said hse had never thought of doing that before (she is 22), and might do so. said it made a nice change. dd1 tried it (I was wary of this, as she has ASD, and mash poteato is one of her favourite foods - I didn't want to mess up a staple for her, so I served her normal mash, and offered her some of mine from my plate) - she liked it, and had a second taste, and said it was nice. she was interested that it had carrots in. dd2 we had to persuade to try it (veg and potato avoider!) - she tried it, and (predictably) said she didn't like it. she didn't hate it though.

~ Will you be cooking it again?

I think so, yes. It really did make a nice change. I couldn't find a whole swede in my branch of Morrisons, and so bought ready chopped carrot/swede mix, which made this really easy to do.

~ Any other general comments about the recipe?
we didn't use milk in the mash (dairy intolerance issues) and we used Pure spread instead of butter. also no gravy (ASD food issues, as well as gluten issues which make most shop bought gravy a no-go). still, we made the recipe to the best of our food-issue abilities, and it was nice.

I'm not a tester, but my best tip for mash is instead of adding wholegrain mustard, swap it for horseradish instead. Very very tasty indeed!

Cajun-style steak and chips.

~How long did it take you to cook the recipe?
Took 25 minutes. Really easy and quick to prepare. So much so that my DH has had a go at making them too! (faints!)

~ Did you and your family enjoy the recipe?
Both myself and DH enjoyed the steak and chips but not too keen on the salsa. The children enjoyed the chips but they aren't huge meat eaters - unless it's mixed in with other stuff IYKWIM.

~ Will you be cooking it again?
Already have done! Quick and easy to both prepare and cook. Almost convenience food.

~ Any other general comments about the recipe?
Loved it. Would be great for a student budget too.

Cajun style Steak and Chips
Sorry it's late - did this last week but wanted to type it up on my pc rather than the phone as I knew it would be long! I've stuck some photos on my profile again.

~ How long did it take you to cook the recipe?
Probably took about 40 minutes for the chips to cook through properly. The steak and salsa were done much more quickly though, although I did hold off from doing the steak until the chips were almost ready as I didn't want to be left with the steak sitting around going cold while the chips needed more cooking.

I flipped the steak in a small frying pan with a little knob of butter rather than grilled it; my grill's not working very well and it's a major job to clean after something like this so it was easier to do it as I normally do. I did however use the timings for the steak to do on each side, rather than my normal guessing that it looks about right, and it did work very well for my bit of rump steak.

~ Did you and your family enjoy the recipe?
This one was just for two people so dh and I had it, plus dc are not keen on spicy food.

It was OK - I left some of the chips plain for me as I don't like hot spicy things typically although dh does. He really enjoyed the chips to start with - but after a few said that there was a strong black pepper taste that took over and wiped out all the other tastes.

Dh was also a bit bemused by the fruit (he did ask if there was custard coming too or if we were having main and pudding together to save on washing up :) ) however once he'd had it he did volunteer that he was surprised quite how well it went with together, the lime and mango helping to take away the pepper kick from the chips. He's always thought that I'm funny for having steak and fruit together before which I often do if I'm being lazy in the mood for it. We ended up having mango, pear and red plum salsa as we couldn't get peaches.

I didn't like the chips - they weren't fluffy particularly on the inside, they were much greasier than they would normally be if I was making potato wedges (par cook first and then put into hot oil). And they just took so long to cook! And the steak cooked nicely, tasted good, plus I like fruit with steak so that was ok - but thought the lime was a little overpowering (maybe because I wasn't having the spicy chips so didn't need it as much?)

Probably not in this form. DH liked the chips but I would go back to using paprika and garlic rather than the cajun spice mix. He would also be happy to have the fruit with it again which was a surprise as he's never really fancied it before. I'll also probably be better at timing steaks as I cook them to get a more reliable guide to how well done they are.

~ Any other general comments about the recipe?
The recipe was misleading - the ingredients for the salsa and salad weren't listed in the ingredients list at the top - pure fluke that I happened to read down and spot they were needed before going shopping, would have been mad if I'd missed them and then had to go back out again.

I needed to do an extra potato's worth of chips for dh - one large potato wouldn't have been enough for him.

The chips took a long time (40 mins) again to cook. I've done them subsequently and par cooked them in the microwave to speed them up, they were much faster to cook and nicer too. They are also better if put into hot fat rather than tossed in cold oil.

In fact, trying to spread the chips out then putting the spice and oil on whilst on the baking tray was tricky - much easier to par cook in the microwave for a few minutes then toss the spice mix in, then pop onto the baking tray that has the hot oil on and then mixing them carefully.

It would have been good to have more guidance on the type of potato - even a floury/non floury comment would have helped.

Steaks - I'm guessing the timings in the instructions would depend on how thick your steak was? It would have been good to have said the steaks would have improved for resting for a couple of minutes before eating.

Only my question regarding how green do potatoes have to be before they are not safe to eat from last month - is a tinge of green alright or should I throw the potato away? Or is it ok just to cut the green areas off?

We did Cajun style steak and chips

How long did it take to cook the recipe?
The timings were about right for the chips, they took about half an hour. I often cook home-made chips this way, but without the spices.
I grilled the steak as per the recipe, but found the timings too short. 2 min each side (which should have been rare) was still cold in the middle, 4 min each side was nicely rare in our cooker, but as dh wanted medium and I wanted rare, we just did an extra few minutes each side and then it was perfect. I suspect that as we got our steaks from the butcher, they may have been cut a bit thick.

Did you and your family enjoy the recipe
I'm afraid most of us didn't. The chips were way too spicy for the kids, and me as well. Dh liked them.

Will you be cooking it again?
I might in future cook some of the chips plain, and some spicy for him - it was easy enough to shake some spices over them!
I might well grill steaks in future - normally I fry them, but grilling was quite easy. Though I did miss all the fried onions caramelised all round the edge of the frying pan . . .

Any other comments about the recipe
Like zipzap said, the ingredients for the salsa should have been included at the top. I made a real pigs ear of shopping for this recipe - the first time just because I forgot to order it at all, right enough . . .

Um, no. You'll have to come out with something quite exceptional to actually surprise me about potatoes . . .
I know things like "the biggest source of vitamin C for the UK population as a shole is from potatoes". I may be a bit sad . . .

Any other general comments about potatoes?
I would like to know a bit more about which different varieties of potatoes are available, and what I should use them for. Although as I really prefer waxy potatoes to floury ones, I might just use the information to avoid floury ones :-)

Hi MNHQ

Just wondered if there were going to be any recipes sent out this month? I know it originally said they weren't going to send any out for December as everybody was busy, but I assumed they meant the ones they send out at the end of December (when everyone's busy with Christmas and New Year) rather than the ones around now when it's not so busy... Did I just assume wrong or has my recipe gone astray in the post?

I've obviously been thinking about these wrong - I was thinking of the last one we did as the October one as the recipe arrived in October so was thinking the November one would be the one arriving now.

Don't know about anybody else but it's not too busy here at the moment - few extra bits on but the Christmas stuff hasn't kicked in yet and everybody still needs to be fed. However the end of December / start of January is panning out to be really busy with lots of guests and trips out... Will they be sending the recipes out extra early or having an extra long feedback time? (she says hopefully whilst wondering if the fact that recipes are sent out at the end of one month and feedback given at the start of next month has led to a bit of confusion?)
