Ingredients16 small new potatoes/Charlotte cut into quarters2 tbsp olive oil 2 cloves garlic, sliced 4 pork chops or steaks 4 lean rashers dry cured smoked bacon (optional) 4 small carrots, peeled and cut in half lengthways 3 small parsnips, peeled and cut in half lengthways 1 leek, washed and cut into chunks 1 eating apple cut in quarters Seasoning |

Method1. Preheat the oven to Gas Mark 6 200ºC 400ºF2. Take a rasher of bacon and wrap around each pork steak 3. Place all the remaining ingredients onto 1 large or 2 smaller baking trays and toss together to coat in oil 4. Spread out and arrange the ingredients in a single layer on the baking sheet/s 5. Add the pork on top of the vegetables 6. Place in the preheated oven for 25 minutes until meat is tender and juices run clear, and then serve with additional seasonal green vegetables | |||||||||||||||||||||
