Mine is equal measures of buttermilk and mayo, and then double of Greek yogurt, half the juice of one lemon, two tbsp of dried Parmesan, a teaspoon of dill, garlic granules, Maldon seat salt, onion powder, and cracked black pepper.

Makes that amazing ranch dressing you get on the side of fried shit in America and is great for pizza crusts but you can also make kids eat ANYTHING dipped in it.

I’ve watched my kids enthusiastically eat celery, radishes and green peppers which aren’t normally things they will eat raw.

I'm diabetic and have been trying to cook more healthily. This was last nights effort taken from the Diabetes UK site, braised Italian lamb. It was ace.

Coat 4 lamb leg chops in seasoned flour. Preheat oven to 180. Add 1tsp rapeseed oil to an oven and hob safe casserole pot and soften 4 quartered red onions on the hob for about 3 minutes then remove from pot. Add another tsp oil, add the lamb and brown on both sides for a couple of minutes per side. Add the leaves off a large sprig of rosemary, 1 tsp oregano and 4 sliced garlic cloves with the onions back into the pot, pour in lamb stock (one lamb oxo cube dissolved into a pint of boiling water), then bring to the boil. Add in a tin of chopped tomatoes, 1 tbsp balsamic vinegar and a pinch of black pepper. Put the lid on and stick in the oven for about an hour, taking the lid off for the last 20 mins.

Chocolate buttercream — don't use cocoa. Use drinking chocolate, a splash of strong coffee and (if you have it) evaporated milk to slacken it. It tastes so much creamier.

After Dinner treats. Also great if boxed for a small thoughtful gift.

De stone mejool dates, fill with peanut butter or almond butter, then dip in melted dark chocolate.

Decorate as you see fit. I put frieze dried raspberry flakes, gold leaf or desiccated coconut on top depending on the celebration.

Sometimes I make them for myself and insist I only eat one a day. 🙄

Satay spinach noodles and salmon:

Sprinkle Chinese 5 spice over salmon skin, grill skin side up.

Whack some egg noodles on to boil.

Quickly fry chopped spring onions, garlic, ginger and chilli flakes.

Take out salmon, drain noodles.

Add a squeeze of honey, a tablespoon of peanut butter and a big glug of soy sauce to frying pan mixture.

Add noodles and toss, adding more soy if too dry.

Next add spinach-heat and toss till spinach wilts.

Put into bowls and top with salmon.
SO GOOD AND EASY. I have managed to get this down to 12 minutes including prep and everyone devours it!

Equal amounts of soy sauce, oil, maple syrup. Add splash of liquid smoke then stir in sliced mushrooms. Leave 5 min then tip into frying pan and cook until mushrooms are done and most of the liquid has been absorbed.

5 oz marshmallow(140 g)
1 ½ cups milk(360 mL)
1 cup dark chocolate(170 g)

Preparation
In a medium pot, combine the marshmallows and milk. Cook over medium heat, stirring constantly, until the marshmallows are completely melted, 5-7 minutes.
Pour the marshmallow mixture over the chocolate in a medium heatproof bowl. Let sit for 2-3 minutes, then whisk until well combined and smooth.
Divide the mixture between 4 serving cups. Chill in the refrigerator for at least 1 hour, or until set.
Top with whipped cream and grated chocolate, if desired.
Enjoy!

@MidnightFlit I should probably have edited to say, Start at one tsp of horseradish and add to taste, as some people don't like it too hot

I didn't have any horseradish so used wasabi instead...awesome and so easy. I'm definitely having it again tomorrow Grin thank you!!

Fry a diced onion with some garlic and ginger very gently until soft and slightly browned. Add passata, and stir in a tin of tuna. Bit of parsley chopped up - delicious tuna sauce for pasta

You need a tin of sweetend condensed milk.
Divide the contents between 2 jam jars, they should both be about half full.
Put lids on the jars and put them in a slow cooker half full of water.
Leave for 8 hours and come back to 2 jars of deliciousness

A spoon or 2 with Greek yogurt is rather nice

@steppemum I used to live in Indonesia too! You can get Kecap Manis from the Chinese Wholesalers/ Supermarket. I live in a city with a Chinatown and the supermarkets there sell it. Don't know how close you are to those kinds of places. Hope you find some Smile
