2 Adults
1 Teen that eats like an adult.

I am going to try for:

Chicken Dinner
Chicken and Veg Pie
Sandwiches
Soup

Chicken and veg pie will have peas and carrots.
Sandwiches will be bits mixed with mayo and maybe sweetcorn to bulk.

Any other ideas?

I use a 400g pack and by the time I've added onion, carrot, celery a green pepper, lentils, baked beans, tinned tomatoes, I've got loads. does 4 of us 2 days in a row and still some left to freeze

I low carb and we had chicken last night. It was a large one and made two generous meals for the grown ups and a good meal for a 4 year old with spuds and salad. We used a mix of white and dark meat.

The leftover meat was picked off the bones and half was popped into the 4 year olds lunchbox with some leftover veggies a lump of cheese and half a wrap with cream cheese. The bones were chucked into the slow cooker with vinegar and water on low overnight.

This afternoon I had a mug of chicken stock with the final chicken scraps for lunch, and used the rest of the stock for tonights beef stew then I topped up the slow cooker with cold water again. Tomorrow there will be another 2 litres more stock which I either freeze or drink.

I think the assumption that eating a lot of meat is the cause of obesity is a little naive. Eating crap from packets is probably the biggest cause. Having an extra slice of chicken is unlikely to be doing much.

Another idea is using some cooked rice (best already cold), and making nasi goreng. Basically, fry a chopped onion, add chopped garlic, add handfuls of veg (a mix of whatever you have - tinned sweetcorn, peppers, mushrooms, finely sliced carrots, peas (fresh or frozen), French beans, sliced courgette, etc all great), add a mix of (tuna (tinned), prawns (from freezer usually) and cooked chicken), throw over a couple of tablespoons of mild curry powder, add cooked rice, toss it all about for a few more minutes, serve.

It's great for using up little bits of leftovers and last few veg, and/or a meal from freezer/storecupboard.

Otherwise, for leftovers other than the pie:
Chicken and mushrooms with a cream and white wine sauce, perhaps some tarragon, served with pasta/rice or mash.

Stir fry (Asian type) again with a mix of veggies (sliced Brussels sprouts, peas, carrots, onion, brocolli etc would be nice) and some rice or noodles. Packet of sauce (hoi sin, chop suey, sweet'n'sour etc), or just some Chinese rice wine or sherry, with a good slug of soy sauce works well.

Pasta bake - also with lots of veggies and a tomato or a creamy or cheese sauce. Actually, pasta bake is the second iteration of that dish, as the first is the pasta with sauce fresh, and the bake is the reheated version (I tend to freeze leftovers for baking on a work night).

For the sambos: try DD's favourite - mix mayonnaise with some curry powder and chunks of chicken. She doesn't even bother with bread for that anymore (but she will make it herself so I can get on with dinner).

Or do a toastie - slice of bread with pesto, sliced chick on top, perhaps a slice of tomato, topped with grated mozzarella or some nice strong cheese (mature cheddar, gouda is nice, or edam), and toast as an open sambo under grill.

see this is interesting. on loads of other threads, for instance school dinner threads and why people refuse them, or when people post their diet up and ask why they are gaining weight or always feeling hungry the consensus is always not enough protein. up the protein and fat as it keeps you fuller for longer. carbs are the problem. they turn to sugar. and sugar is what's making us fat

interestingly since I ditched cereal in the morning my kids no longer complain of being hungry as I took MN advice and give them more protein in he morning eggs and waffles/pancakes which I add coconut/nut flours too to increase the protein and it works.

yet here we are with people who crumble the chicken skin into popcorn (interesting idea I have to say. never would have thought of that one. very unwasteful) and have such small portions of the meat it lasts fir days.

interesting how these things go.

Roast chicken is awesome. Makes probably four meals for us, that's two adults.

I always try to make chicken stock, it's so good for you and makes great soup.

I think the chicken skin popcorn might have been a joke, but there are more ways to add protein to a diet than large portions of meat, eg a couple of eggs, or pulses.

No-one is saying that a chicken should last for days or people should eat tiny portions. Half a chicken breast is probably more than the recommended portion size of chicken and this is being included in a meal with several servings of vegetables too. There is nothing wrong with that type of carbs, rather the rubbishy processed ones like coco pops for example.

aaah but that's where I think, well if I've got to add a bunch of beans or eggs to it in order to make the protein level higher, well I might as well make that a vege meal and ensure the meal before hand had sufficient so i didn't have to add a bunch of other stuff to that too.

dd1 eats say half a small or a third if a large breast. dd2 would probably have a third and maybe a chunk off mine if she wanted more. and dp would eat a whole one and the third left by dd2 Grin

I've tried baked beans in a spag bol, but nope, maybe it's the italian blood, I'm a purist when it comes to meat sauce(minus the chicken livers, animal innards don't come in the house). We tend to spread our protein intake through the day, so we get through heroic quantities of cheese, pulses and eggs

It is SO juicy. Just letting it rest now before portioning it up.

Yay. It is a pity you don't get the crispy skin, although you could remove the skin beforehand and cook it separately.

A chicken lasts us a few days using it as Barbara says - a day or two of roast, then smaller amounts in paella, risotto, curry, on pasta, chicken ramen with loads of ginger and chilli etc. You really don't need loads of meat to enjoy it in those sorts of meals. They are also good ways to get veg into us all.

It wouldn't work at all with low carbing.

We eat a fair amount of meat free meals so to me it makes sense to use small amounts of meat to add flavour, rather than as the main building block of the meal.

No giblets. My Mum used to use them. I think you have to go to a butcher for a 'real' chicken if you want them.

I think we have enough meat for two meals on the plate. The carcass wasn't bare so hopefully enough will come off to do the soup.
