self employed small business or what?

Bear with me on this
My dp has been a semi professional wrestler for the past 10 years. Due to ill health he doesn't really do it anymore but for the past couple of years has helped teach young people at a wrestling school. We have recently moved areas meaning it is a bit difficult for him to now help at the school.
Anyway he has approached our local community centre and they are fully behind him setting up his own wrestling school in our local village. At the moment he has got enough people wanting to come so that costs will be covered and not much else - therefore it will be effectively a voluntary position but if more people sign up once its up and running we could end up making money. What I need to know is does anyone know where I can find info or know anything with regards to what he would have to do if it turns into a 'small business' as opposed to a voluntary village hall club.

either way he need to organise Public liability insurance - he might be covered by the centre insurance but get it in writing

Look at the business link website because there is lots of info about accounts/starting a business etc
