I’ve downloaded the HMRC app to check Tax Code, NI contributions etc. Every time I use it I’m asked for SO much information!
They need my 12 digit code, password, PIN code, a code they’ve sent to my phone, DVLA details, passport details etc.

I appreciate it is for security but what’s the point of downloading the app with all the security and then having to do this every time?

I use the Gov Gateway on my PC. I needed the info you mention to register but to log in I need username/password and a code to my phone. I'd expect nothing less than that including the 2 part thingy with the phone.

I’ve got it on my iPhone and set up Face ID for it could you do that?

Every time? That's not right. I have the app and I only need to enter my login/password and then a code sent to my phone.

I have this app and it is just my fingerprint to get in after the initial sign up.
