Doing agency work while on Universal credit

I am claiming UC and I started doing some agency work and depending on how many days of work in a month I get, it will sometimes match what I get from UC, but sometimes it will be less. On those months when it is less, will I get a UC top up? If so, how will they know?

It really depends on what you earn in your monthly assessment period. Each pound you earn will reduce your Uc by 55p. If you have kids on your claim of the LCW/ LCWRA element then you get a work allowance meaning some of your earnings is disregarded before earnings reduce your UC. The work allowance amount will vary depending whether you rent or not.

Assuming agency pays via PAYE Universal Credit can see what they report to HMRC when they run payroll. This means that what you get in UC should directly reflect what you're paid.
