DH is still being paid by his last employers, where do we stand?

Well its not really up to you to work out how much dh should have been paid so presumably they have got it right

so I would bank the money and keep schtum

Do the letters demand the return of the money? If not, then I wouldn't do anything for the time being. Put the money aside, just in case you are required to repay it at some point (if you know how much the overpayment is). What is the purpose of the letters?

In that case, don't touch the money - put it in an interest-earning account. They will have to prove that they have overpaid him. If they write saying, oh we've overpaid him by £x, ask them to provide full details and evidence that he is not entitled to this money.
