Universal credits

Im a bit confused by universal credits, So i work but only do 12 hours a week as i have young children, but hoping to work more hours when second child is at school.

What i dont understand is the amount im earning does not effect my universla credit amount. But if i earn more 63p will be taken from every £1. Now dont get me wrong i am so so grateful for UC, it has really saved my bacon the last year or so. But i just dont understand, im desperate to earn more but tbh im scared how it all works.
I can work more hours but it will have to be sporadic. So my question is. If i usually do 12 hours a week at work but on the odd week i can do more, how will that effect my uc and housing benefits? So if one month i was able to work full time and then the next only 12 hours a week, how will this effect things?
Thank you
