vegetarian meals - help please!

This month we're cutting down our food bill. It's going to be a vegetarian month - any suggestions for good veggie meals?

They don't necessarily need to be budget meals btw.

Veggie lasagne

Veg based pasta- tomato & basil, arrabiata, creamy leek and mushroom, homemade pesto for example

Chilli with onions, peppers, mixed beans
Stir fries with rice or noodle

Omelettes- cheese, mushroom, leeks, spinach for example

Jacket potatoes

Loads of options for veggie curries

Chickpea stew

Butter beans and spinach stewed in tomatoes

Risottos

These are my veggie staples really.

My staple veggie meal is cheese beanos.

Toast one side of the bread under the grill then put beans on the I toasted side, top with grated cheese and toast until the cheese is melted. Very filling.

Lentils of all colours are my staple.
Brown and green ones for stews, bolognase etc
Red ones for dahl.
Curries with loads of veg and chickpeas/butter beans etc
Mexican stuff like chilli's made with a variety of beans like kidney beans, pinto beans etc
Fajitas made with beans and pepper, flour tortillas, sour cream, salsa

Dahl: delicious...I know you didn't say budget but it costs pennies and is so good.

In fact I'm going to cook it for dinner tonight now. Yum

Stir fry veggies with noodles

Anything sweet cooked fruit, crumble, upside down pudding, rice pudding, pancakes
