A day in the life of a low carber

I'm struggling a bit at the moment after 6 months of eating low-ish carbs and my weight is not budging (lost 1st 9lbs which is good but lost one stone in the first 4 weeks). I'd love it if you could tell me what you ate yesterday or in a typical day, whichever you prefer. Here's mine:

Yesterday

B: Bacon roll (keto roll from low carb food company), 2 x coffee with splash of milk
L: 2 egg omelette with spinach and cheddar, one square of Lindt 85%
D: Chicken with tomato and mozzarella and tenderstem. Glass of white wine
Evening snack: small bowl mixed nuts and another square of chocolate

Not sure of carb count but suspect around 30g

Today's plan

B: Full Fat Greek Yogurt (M&S 10% one is amazing), Keto granola
L: Chicken Caesar salad with croutons picked out
D: Chicken curry made with coconut milk and cauli rice
Evening snack: Square of 85% chocolate, maybe small bowl of nuts if I'm peckish.

That all sounds grand.

Today I had

a mushroom frittata with roasted cherry toms for b'fast
Veg curry with cauli rice for lunch
Chicken breast with salad and oil/vinegar dressing for dinner.

But at the weekend I ate out twice and had chips, white bread, pudding and other baddies.

I lost a stone on the low carb diet last year and have managed to keep most of it it off but I still have naughty days.

A friend did the 'lose a stone in 21 days' (but she did it for a month) so 800 cals per day, no white carbs at all and no GnT!! If my weight creeps up again, I might summon the control to try this.

You could consider introducing some intermittent fasting? I've been a low carber (mostly!) for years and years now. I generally don't eat breakfast, but have 2-3 cups of coffee with milk.

Typical lunches for me:

  • 2 boiled eggs
  • cheese/ham/mushroom omelette, sometimes with salad
  • egg/tuna mayo
  • FFGY
Typical evening meals:
  • pork or salmon stir-fry, sometimes using canned coconut milk (full fat), and served with Bare Naked Noodles or cauliflower egg fried 'rice'
  • sausages and roast veg, (peppers, courgettes, onion, garlic, occasionally chillies, occasionally carrots), sometimes also add some halloumi
  • chicken thighs, fried with onions, fennel, chilli flakes and then baked in the oven with tomato purée and cream added to the meat
  • meatballs (beef mince, onion, garlic, red pepper, all whizzed up in the processor, then formed into walnut-sized balls), baked in the oven and served with a garlicky tomato sauce
  • cauliflower cheese (sometimes add leeks, sometimes add bacon, sometimes also add hard-boiled eggs); cheese sauce made from double cream, into which I melt loads of mature cheddar. All baked in the oven with extra cheese on top so it goes brown/crispy
  • aubergine and courgettes, sliced and griddled, then layered with tomato sauce (tinned toms, onion, garlic) and mozzarella; baked in the oven with more mozzarella on top, and some finely grated parmesan
  • roast pork or chicken, with any kind of low carb veg (if pork, also lots of lovely crackling!)
  • fish pie: smoked haddock, cod, salmon, prawns, hard boiled eggs, using the milk that the fish has been poached in, and topped with a mash made from celeriac and leeks

You need more fat. It is LCHF and you are lacking the fats.

Sorry I've not been back - work is ridiculous at the moment and it's hard to find the time. I lost 3lbs this week which is amazing but only puts me 0.5lbs lower than I was mid-May so I'm definitely a tortoise in this race!

Plan for today:

B: 2 x coffee with milk (in the office so no breakfast)
L: Chicken Salad (our sandwich counter makes it up for me so not sure what type yet but probably chicken, bacon and mayo)
D: Spinach and Cheese Omelette with a salad & dressing. Food delivery booked for tomorrow morning so using what I have.

Most likely a handful of nuts and a square of dark chocolate as well.

@lyingonthebeach well done on maintaining the weight loss! That's the hardest bit I find. I'm trying hard to see this as a lifestyle change and it's working so far but I've been down this road before and slipped up so we'll see. Tried cauli rice for the first time ever this week can you believe it and can't say I was impressed. Rice is the one thing I miss the most and while it looks similar it doesn't have that lovely sauce absorbing quality that you get with rice!

@BIWI some really good ideas thank you! I do have the cauli cheese regularly and got the idea from her, perhaps from you. It's a bit of a life saver for me as I have it in place of fries, mash, potatoes so just adapt our usual dinner. The meatballs sound great too. I haven't thought about doing meatballs as I associate them with pasta but why not. I already do intermittent fasting 3 days a week (my in office work days) but love breakfast so not ready to give that up yet. I could have my breakfast for lunch instead I suppose. Will give that a try. 🙂

@User8743 , thanks. I'm not really low carb enough to be classed as LCHF but I do eat plenty of fats - it possibly didn't come across in my original message. Plenty of nuts, butter, cream, olive oil etc. I do sometimes worry that I'm eating too much as my cholesterol is high and that's one of the reason I'm trying to lose weight. I am going back for a check-up in October so will find out whether there's been a change.

I have been low carbing a while and I find it works best if my first meal is big fat/protein exclusively. If i have a steak in butter as my first meal, I don't want to eat again. Try a few things out and see what works.
