Keto/low carb vegetarian - what did you eat today?

Hiya,

I'm just starting out on very low carb diet as a vegetarian. It's not very easy as a lot of the meat substitutes and alternatives such as beans, quorn, quinoa etc are quite carby! I'm trying to stick to under 30g carbs per day.

I would be really interested to see what other veggie low carbers are eating on a daily basis so please come and share your daily menu! I seem to be eating a lot of cauliflower 😂 I'll start!
Today is:

B - alpro soy yoghurt and a few mixed berries
L - cucumber and carrot batons with hummous
D - cauliflower or omelette based pizza with veggie pepperoni and mozzarella

I’m just starting low carb today, I dabbled in it a couple of years ago, but I’ve turned veggie since and it all seems a bit more daunting this time!

Today I’ve had -
B - bulletproof coffee
L - courgette fried up with 2 eggs
D - tofu stir fry with onion, red pepper, spiralised courgette, and a sprinkling of ground flaxseed

I’m actually quite full!
I’ve been calorie counting for some time, initially with some success, not so much lately, but I’m always so bloody hungry, especially in the evening. I’m really hoping that low carb will be the way forward.

I've been hungry during the day but quite full this evening.

I was stuck in the snow this morning and it took me 2.5hrs to do the school run so I missed breakfast.

Lunch was 2 eggy breakfast muffins - I batch cook them on a weekend with eggs, fat free cottage cheese, whatever veg I have in and quorn ham and bake in individual tins then freeze in bags of 2 and microwave on a morning.

For dinner I also did courgettes! Was meant to be a fritter but I went wrong with the recipe and it was a bit wet and mushy. Served with roasted cherry tomatoes and 2 dry fried eggs with lovely runny yolks.

I am eating a lot of eggs!

Oh that’s a great idea for lunches. I might try that. I didn’t get round to taking anything to work yesterday so ended up with M&S spinach and pea soup which pushed my carb count right up yesterday.

I tried a different recipe yesterday, but it was basically another tofu stir fry with cauliflower rice.

School run in the snow for 2.5 hours, what a nightmare! Hope it’s a bit better today Smile

Yesterday was 2 corn cobs from kfc for lunch - had both kids off school and they wanted Uber eats for lunch!

Dinner was a quick shaksuka while I made pancakes for DH and DC. Just a tin of tomatoes in a small frying pan with paprika, garlic, cumin, chilli and cayenne pepper and a handful of cherry tomatoes. Then when it's cooked down create two little wells and crack and egg into each one. The eggs poach in the tomatoes and serve while the yolks are still nice and runny.

Today is 2 babybel for breakfast, carrot batons and low fat hummous for lunch and cheese omelette for dinner with some roasted mushrooms and tomatoes. Puts me at 23g carbs for the day so should be a good day!

No it wasn't fun!! I was stuck in traffic for an hour getting home and then got a call to say school was OMG evacuated due to a gas leak so had to turn around, go pick her back up and rejoin the back of the queue...

If you are doing Keto, everything should be high fat, not low fat as it fills you up.

That's the bit I keep struggling with to be honest! I've eaten low fat for so long with diets like ww and sw that I naturally reach for the low fat versions of everything! I'm using olive oil more though and having full fat cottage cheese and avocados.

Also don't forget veggies can be high carb too, such as carrots.

And yes I'd agree about checking your low fat things as they may be full of sugars/carbs

Carrots and hummus are really high carb!

I’d recommend you go for things like:

Omelettes - cheese - cucumber tomatoes
Cauli egg fried rice - cauli rice with diced up courgette and asparagus - dry fried with gluten free low sugar soy
Courgette ribbon pasta with a cheese or carbonara sauce
Eggs (do you eat fish?) smoked salmon
Salads - tomato lettuce avocado eggs cheese
Mozzarella and pesto
Boiled eggs and butter mashed together (fills you)

You can also use coconut flour to make cookies and things that will keep you from cheating. Babybell are a great snack idea as are olives!

I've been swapping out the carrots for cucumber and pepper batons to take carbs down a little. Love to snack on things like babybel, cottage cheese and my egg muffins too.

Love cauli rice, also cauliflower mash with vegan butter and plenty of black pepper!

Nope don't eat fish at all - nothing with a face on my plate :)

Feeling a bit egged out but as a veggie they are the perfect meal for low carb...

Im strict with the hummous and weigh out a portion to make sure I don't go over carbs. I also usually add a drizzle of olive oil to it which pretty much negates buying the low fat version 😂

Perfect! I’m a big fan of celery and blue cheese too - maybe peanut butter if you fancy!

I know what you mean about the eggs 🥚 feels too rich sometimes!

Ooh yes I like celery. Absolutely detest blue cheese and peanut butter though!

Done good today:
Lunch was hummous and cucumber
Snack of a few cubes of cheese
Dinner is veggie curry with the Iceland no chick strips, they are very low carb. 1.8g per 100g. Just going to have that in a bowl with a drizzle of alpro yoghurt.

Omg I’ve just caved and bought the Rose Elliot low carb veggie cookbook (after seeing the veggie low carb recipes sticky on the bootcamp board) and I’ve just had cabbage ‘tagliatelle’ with Boursin and mushrooms. It was lush! Also had omelette ‘cannelloni last night with spinach. Thought I would be starving afterwards as it looked like a small portion but it was delicious and filling.
