Low carb spiralized veg that doesn't go all soggy ?

Have started low carb this week- going well- no sugar, no bread, no potatoes. Have coped really well no particular griping hunger pangs or cravings! 😊

Has Spag Bol tonight- mine is very healthy- lots of veg included and I did courgetti with instead of Spag. Made a ton in the boiling water for about 90 secs and it diminished to nothing and then, even though I drained it well, left the plate swimming in water...

Any other suggestions for how to do non soggy courgetti or a different spiralized veg that is low carb?

I've never boiled courgette, I always sauté it in oil or butter for a minute or two.

Sainsburys do a pre prepared spiralised butternut squash which is much more robust. It's a pain to prepare yourself so it's worth getting the ready made version!

yes another for non boiling of it.
I just drop it into the spag bol. Stir around for a minute then serve.

Oh fry in butter! That sounds tasty. Is butternut squash low carb? Might give that a go.

Bns is low carb but still fry it as soon as you boil it it soaks up all the moisture. Butter is fine if you're lchf.

Did spiralised butternut squash fried in butter tonight- was delish! Never bought one before. Cut into the end with the seeds and wondered how on earth you were supposed to be able to get it on the spiraliser! Then worked out the seeds were only at one end... Duh!

Very tasty. Had it with sausages, stir fried broccolli and mushrooms. Yum!
