Is 20%.. Daily is that ok .. Fat today overtaken protein by about 15% which is a good thing right?

My ave carbs per day are at about 60 .. But I only having cauliflower cabbage spinach lettuce now and again 2baby plum tomatoes .. Fruit is an apple blueberries .. Strawberries ... Are these all ok

And water ... I feel like I slosh when I walk

It is a good start but you might want to aim lower. I usually go for 10 percent carbs and at least 70 percent fat.
Berries are generally Ok but take care with apples.
I have about 20 to 30 carbs a day.
