Last year I lost a stone low carbing and was positively evangelical about it.

It all went tits up over xmas and since then I've put the stone back on again. I've tried low carbing again half heartedly I suppose and the weight isn't shifting at all.

After weighing myself this morning I think my problem is two fold in that I'm eating way too much fat so lots of cheese and full fat yogurt mixed in with moderate levels of carbs.

So that's where I'm going wrong it would seem. So I guess what I'm asking is what is the science behind low carbing and what levels of fat are you supposed to eat?

I don't think fat levels matter as much (depending on how close to target you are) as carb levels.

Can you give examples of your carbs (there will be carbs in yog & cheese too, which varieties are you eating?).

Agree with above. just count your carbs and keep under 20grams at first. Seriously - it is only fat mixed with carbs that causes problems. A moderate level of carbs sounds like too much to me.
