Week 9 - Autumn Low Carb Bootcamp - Our Last Fortnight!

Morning all. A quick post today because I have to get to work early.

Here's the spreadsheet

I'm suffering a bit from an IBS flare-up today, which is a surefire indication that I've been overdoing the carbs Sad

So I'm going back to strict Bootcamp for the next few days to hopefully get it back under control.

Good luck everyone.

Well I weighed on Friday, my normal weighing day and it looked like I had put back 4 of the 5lb I lost last week but I weighed again yesterday and am 1lb down which has taken me under the next stone barrier so I'm claiming that!

I am going to try to be good for the next 2 weeks but I started late so will be continuing after the official end if anyone wants to join me in going on till nearer Xmas

Holmes Welcome back. I think it is great to do this when your head is in the right place and agree that good health is the best motivator.

hi timidviper, as another late joiner, I'll happily keep going after the official bootcamp end as I'm a long way from my target weight. here's to a lean December Grin Grin

So much for two strict weeks, I ended up being a carby twat yesterday and having beef curry with rice for dinner. Confused It was okay but seemed very sweet to me which is strange for curry to be sweet. But in my defense my youngest had to go to A&E at 4 p.m. due to a high temperature and the curry was bought from the hospital 'restaurant' at 10 p.m. when it looked like he wouldn't be discharged for a while. Anyway he had a rough night but his temperature has stayed down with prophylactic Calpol and he's in better form this morning.

I didn't start till end of Sept so I'm going to carry on as long as I can, allowing myself to freefall off that wagon without guilt when I want to for Christmas 'do's but then clambering back on to minimise the damage Grin

Stunt hope he's feeling better this morning. How old is he?

Lily you're right of course, and yes I want to be in a place where I can eat the odd carby meal without worrying too much. I think I'm pretty much there, really - I'm happy to eat like this 90% of the time and it's a way of eating that I'm happy with and that's become second nature now.

Now that I'm near my target weight, I do want to be able to eat things like beans, butternut squash, carrots etc from time to time too, and I think that's achievable (in terms of not putting weight on but not losing either) as long as it isn't too much or too often. I still haven't cracked the whole eating out/at friends' houses thing, as it seems fussy and ungrateful to demand low carb food as a guest. Although vegetarians specify what they don't eat and nobody has an issue with that so maybe I just need to be a bit tougher!

He's a bit brighter but weary iyswim BIWI thanks for asking. He's nearly a year old so hospital was a bit stressful for him. I think he liked the paediatric ward though, listening to the other children's voices.

Morning! Actually managed to weigh myself today and the scales say I've put weight on Hmm bit odd as my clothes definitely tell me otherwise!!

I have swede and celeriac and kale and broccoli and cauliflower now so bubble and squeak with leftover chicken for tonight's tea, soup tomorrow, shepherds pie, cauli cheese, celeriac bake etc all on the menu Grin

Keepon we all eat the same in this house bar the odd meal when I will have leftovers... I refuse to cook separate meals! I found time to sit and write out a list of low carb meals that I knew everyone would eat and meal plan from this. I then add in a new meal every so often so introduce new tastes etc.. Good family meals that we have include: shepherds pie (celeriac or swede topping), moussaka, cheeseburger pie, chilli, pasta dishes (pasta for kids, sliced courgette for me), pizza (pizza for kids, aubergine slices with pizza topping for me), sausage, egg and chips (if I want 'chips' I have celeriac wedges but often I don't need it), fajitas (I have the filling with salad or veg), curries, stews, roasts etc.. hth?

Hi, can I join? I've read the rules, am on day 3 and doing fairly well I think. Belly noticably less bloaty already! 6lb off since Monday, probably due to obsessive water drinking. I did slip and have diet coke last night, but I wasn't craving it this morning which is new!
Is it OK not to eat when not hungry? Yesterday I had a 3 egg, chicken and veg frittata for brunch (about 1pm) and I honestly wasn't hungry again until this morning. I did have some natural yoghurt in the evening, thought I ought to have something.

Keep on recipe for cheeseburger pie:

Cheeseburger Pie

Total carbs 9c. Serves 4

Ingredients:
500g minced beef
50g finely chopped onion
150g chopped mushrooms
100mls double cream
2 heaped tablespoons of mayo
150g strong cheddar grated
3 eggs
salt & pepper to taste

Fry mince, onion and mushrooms (can omit the mushrooms here) together until cooked season to taste, drain off fat, add Lee & Perrins sauce.
Place in a greased foil covered deep pie dish, flatten with spoon (can put sliced mushrooms over the meat layer if preferred)
Beat eggs add mayo, cream and cheese.
Pour over the top of mince, drop olives around the dish and bake in oven Gas mark 5 for 20 to 25 mins until set and golden brown.
Leave to cool before taking out of pie dish, remove foil.

Optional 10 black olives

I use a glass rectangular dish about the size of A4 and I can get 6 portions.

It's yummy hot, I serve with 1-2 portions of veg, it freezes well and it's also fantastic cold with salad so great for lunchboxes.

The basic meat recipe can be adjusted by using marmite instead of Worcester sauce and using a mash to make shepherds pie or use cinnamon 1tsp instead of the WS and some tomato purée to make a moussaka base then add aubergines and an eggy feta cheesy topping (I can find recipe if you want it).

If you can spend some time to list out meals and possible variations then meal planning is so much easier, especially if you have a good store cupboard. As we get low or run out of stuff, I write it on the shopping list and then all I need to do is pick the weeks meals and add the veg (& meat but I try and buy meal on offer rather than weekly), dairy and fruit for the kids for the week. My meals are chosen for each day as I have to fit in around kids activities (so I won't have pizza on a Wednesday for example as we don't eat till 7.30 and we don't get home till 7.10 so meal chosen is one I can make earlier and reheat) and they have to be suitable for reheating as DH works long hours and often eats 8-9pm. For me.. I have my list of meals, my shopping list and then my list of days & diary - once you've got going, it takes 5 minutes - I do ours while we have tea so I can get input from everyone & therefore no complaints they don't like what we have! Wink

I cook one meal too, my toddler gets his carbs from toast for breakfast and two pieces of fruit during the day. Also if we have soup he'll have bread to dip, and he has the occasional biscuit at toddler group.

Our stock of weekday meals are:

Curried cauliflower soup, broccoli and Stilton soup, cream of wild mushroom soup, celeriac soup
Sausages with swede mash and broccoli
Chicken (fried in butter) with Greek feta and spinach pie
Moussaka
Aubergines grilled with feta and salad
Cheese omelettes and salad
Roast chicken with veg, frozen mash for the non low-carbers
Gammon with cauliflower cheese and green beans
Chilli with no beans, plus grated cheese and sour cream, wrapped up in lettuce leaves
Fish pie with mashed caufliwer on top

With the cheeseburger pie, don't drain off the fat! We don't do that on a low carb diet. And you should be buying mince with a high fat content anyway!

Also, if you substitute the onion with shallot you will reduce the carbs again - shallots are 3.3g carbs per 100g whereas onion is 7.9 g carbs.

The Idiot Proof Diet Recipe Book has a recipe for moussaka that is essentially cheeseburger pie, just using lamb mince and feta in the topping! It's lovely.
