Inspiration for chicken!

Anyone any foolproof chicken favourites? Have some breasts I need to use up but can't think what to make. Inspire me!

One of my quick and eay favourites is to make a pocket in each fillet and stuff with something like goat's cheese (with or without garlic/herbs), pesto, olives and sundried tomatoes etc, then wrap in Parma/Bayonne ham or similar and bake in a moderate oven for about 25-30 mins.
