The other thread was almost full, so here's a bright, shiny new one.

And here's the Spreadsheet of Fabulousness

And just in case you haven't discovered it yet, here is the recipe thread. Some truly lovely recipes on here that are worth a try.

I really like anything, but ideally food that I can use for the rest of the family is good so they might have spaghetti bolognese and I'd have mince etc. not too much cooking
I live in a small town with a small tescos and do an online sainsburys shop once a month. I have a very tight budget and 5 kids so cant justify spending too much on me IYSWIM? I can't get to an Aldi, they are miles away.
My favourite at the moment is fried belly pork, spinach and a dollop of Greek yoghurt. I tend to season it with Chinese 5 spice ATM. I like fish but it is hard to get round here. I prefer vegetables to the meat sometimes and a good grab it quick breakfast is necessary during term time. I quite like Greek yoghurt with a few blueberries and a spoon of flaxseed is good (not for bootcamp though )

Sorry to bother you all with my whiney whining Grin
Hope you're well?

BIWI · 16/08/2013 11:50

No worries - hopefully I can help you with the whiney whining! Grin

Will see what I can come up with.

Is there anything that you/the family really don't like?

The last few days I have been really hungry, and craving stuff like pizza Hmm weight lost is slightly down, am an drinking tons of water. Loads of veg too. I might start über camp tomorrow to get things going again, I've been doing bootcamp light bit with no more than 40g carbs a day. Any ideas?

BIWI · 16/08/2013 12:48

If you're really hungry then it sounds like you're not eating enough fat or protein. If you up your veg then you are upping your carbs, so by definition also reducing protein and fat.

period due cheese? i am ravenous before my period

daisychicken · 16/08/2013 13:04

Twit - could you not have spag bol? Adjust the meat recipe (everyone's recipe is different!) if required then make your "pasta" from strips of courgette fried in butter/oil?

What about using mince to make lasagne (use leeks as per the 'hairy dieters' recipe for the pasta sheets), or cheeseburger pie (mince bottom layer then a cheesy eggy top layer) or chilli (extra veg instead of rice if you can't be bothered to do cauliflower rice - I never can!) or homemade burgers (with salad or veg or make oopsie rolls) or moussaka? That's off the top of my head but all dishes my lot will eat - I adjust to suit me, add in extra veg if I need (DH & dc can also have) plus a carb for the carb eaters.

Other cheaper meals include

Cauliflower cheese - can add bacon or serve with sausage (baked pots for carb eaters) if required but I find it filling on its own.

Tomato soup (great store cupboard recipe from passata - a Carolyn Humphries LC recipe) - add rolls and a pud for carb lovers

Bacon and egg pie - divide with pastry top for 'them' and crustless for you with salad or veg

Crustless quiches with salad or veg (hm chips for the carb eaters)

I sometimes do bacon & egg for tea for me and give the family pizza or jacket pots - helps keep costs down by limiting the meat to one person or I save a portion of another meal for me so I eat leftovers.

loopyloou · 16/08/2013 13:05

Beryl, when you say use a microwave cover, do you mean the sort from Lakeland with ventilation holes? I don't fancy egg all over my microwave! Shock

loopyloou · 16/08/2013 13:09

IBO, sounds nice. I think I'm just getting a bit fed up of meat and eggs. I don't have time to cook at present and am on a tight budget as dh still out if work. Dh has taken over evening meal prep but can't cook at all so needs easy cheap meals! I've tried just forgetting about low carbing for now, but start to suffer with IBS when eating carbs again.

CheeseAndFriedMushrooms · 16/08/2013 13:33

biwi I will up my protein intake, but for example I've just had a 3 egg on letter with mushrooms, lots of butter, and a couple of glasses of water. Has leftover cauli cheese for breakfast, and have had 2 baby bells and still feel like I could eat 😞

Don't think my period is due, as am normally ravenous before its due too but am bf, and have only had two periods in the last four months, eight weeks apart......

Off to boil some eggs for snacks......

NigellasGuest · 16/08/2013 13:40

Well done IBO that's in the right direction!

Did anyone watch The Men Who Made Us Thin last night? It really made me feel better about sitting on my arse all day not exercising every day!

New Start I've taken magnesium supplements in the past to try to combat sweet tooth cravings.

IBO · 16/08/2013 13:57

Cheese try and add more oil/butter to your meals. It keeps me full for longer...
Nigellas thank you :) And I will watch the men who made us thin on iplayer tonight. I hope I will feel better for not exercising as well :)
loopyloou what about canned fish or something.. hm.. this woe can be quite expensive..

BerylStreep · 16/08/2013 14:11

Loopy that is exactly the sort of cover I am talking about.

You can also do them in the oven, but part of the joy of these is that they are so quick, so gaffing around with the oven is a bit of a hassle unless you have the oven on anyway.

NigellasGuest · 16/08/2013 15:41

Loopy is the issue basically how to replace potatoes? They are so cheap and form the bulk of so many meals. My fridge is full of them (not for me, I hasten to add).

Mouseface · 16/08/2013 15:59

I'm off - and have just had a quick peek through the last few posts, I am sooooooooooooooo going to need this thread and info when away, I hadn't even thought of spag bol!! Fab!

Bye for now xxx

daisychicken · 16/08/2013 17:40

I just googled and other low carber's do pretty much the same recipe that I would do. I'd be tempted to leave the carrots out or put them in and then just not eat them - personal choice I guess!

LC spaghetti bolognese

Lighthousekeeping · 16/08/2013 17:41

I'm so daft what's the difference between boot camp and boot camp light? I don't know what camp I'm in !!

daisychicken · 16/08/2013 17:43

Nigella you could replace the potato with celeriac depending on what the dish is? Have to admit, I rarely do that - only perhaps for a version of potato gratin/potato bake or shepherds/cottage pie in the winter months. Usually I just add a bit of extra veg on my plate - I don't miss the potato at all.

BIWI · 16/08/2013 17:47

rules are on the tabs here!

Bootcamp is stricter and really just the first two weeks - no alcohol, no fruit, no nuts/seeds. Bootcamp Light allows some fruit (berries), some alcohol and some nuts

OP posts:
NigellasGuest · 16/08/2013 18:20

I don't miss it either daisy - my last post was directed at Loopy and I was going to try to suggest a cheaper version of celeriac although I'm not altogether sure it actually exists.......

NigellasGuest · 16/08/2013 18:21

OH FFS ignore my LAST TWO posts - I put Loopy and actually meant TWIT

NigellasGuest · 16/08/2013 18:22

BIWI would you say Bootcamp Light is the same as maintenance?

BIWI · 16/08/2013 18:29

Well it could be, Nigella. Thing is, because we all have different levels of carbs that we can tolerate, for some people Bootcamp Light might be maintenance whereas others may be able to include more carbs in their diet.

It's a tricky one.

I think that when you get to your target weight, or within a half a stone of it, it's a good time to experiment with higher carb levels, to see what impact it has on your weight.

prettybird · 16/08/2013 18:34

Cauliflower, cabbage and turnips (swede) are cheap and filling. I've started using cauliflower almost like potatoes: roasted florets (with a bit of olive oil, cumin and coriander) are yummy. Cabbage thinly sliced and microwaved with butter is tasty, as are neeps (swede to the Southerners) mashed with plenty of butter (and salt, pepper and nutmeg).

daisychicken · 16/08/2013 19:26

I was just going to mention cauliflower like Prettybird - I've read recipes where people mash it like mashed potato or rice it for 'rice'

loopyloou · 16/08/2013 20:17

Just tried making flaxseed muffins, but didn't like it at all, sorry Hmm

I didn't put Stevia in because I don't like using any sweetener at all. I did put some blueberries in, but it just tasted eggy and weird. Thanks for the suggestion though.

I might make some mashed swede and use that to make a sort of rosti.
