Many apologies for the late start this week. We have family here, and I've spent this morning fixing Lego, watching CBeebies and making toast, coffee, coffee, tea and more coffee!

Anyway, here as ever, is the Spreadsheet

Hope everyone had a good week, and here's looking forward to a good week 5 - hopefully we're now out of the doldrums of weeks 3 & 4!

@ChairOfInvisibleStudies blimey that sounds mega stressful, and medals deserved for managing it all.
I slept till half six this morning which is the latest I've slept in weeks, hoping I can start to get some sleep now everyone I settled with their next steps.

I need to come up with a treat for my next mini goal, my mini goals have shrunk to every kg now as I really struggle once I get close to my targets. I am back to my original target from when I first started which at the time seemed so unacheivable. I bought some fabulous new gym leggings for this weeks.

2 weeks till I visit uni friend and 3 weeks till works night out so I have the motivation right now.

I was looking at body fat percentage images to work out what I need my body fat to be to see good abs, turns out it's very low so might have to resign myself to never having a beautiful 6 pack.

And glad to hear things are setting down/a little less stressful @ditavonteesed - don't despair over the abs! The way things are going, along with your training routine, you are likely to get there - it may just take you a bit longer than you had thought. (And frankly, abs like Jessica Ennis-Hill are pretty much out of the realms of possibility for most of us!)

Something we haven't had for a while is a recipe challenge!

And this/next week, given the distressing and depressing news about the cost of our utilities, I'm focussing on slow cooker recipes. I realised that I use the oven most days, which uses a lot of electricity, so I'm trying to use my slow cooker more often.

I have a loin of pork in the freezer, so this is my plan:

Loin of pork joint with a lemon, herb and garlic gravy

(Start by defrosting the pork, obviously!)

First, sear the pork skin to render a little of the fat, then transfer the meat + rendered fat into the slow cooker, on top of a bed of shallots and a couple of sliced lemons. I also have windfall apples, so I might add a few slices of apple too (not strictly that low carb, but this is a meal that will serve 4 or 5 of us, so over all won't be too bad).

Will season with sea salt and freshly ground black pepper, and will also add a couple of sprigs of fresh rosemary and oregano, that I have growing in the garden, a few unpeeled cloves of garlic, and will add a small amount of water, to make a gravy.

Cook on low for around 8 hours I think. Might serve the juices just as they are (first removing the lemon slices), or might whizz them up in the blender.

The pork sounds very tempting. I will definitely try that next week. I know ham is processed but rather than buying slices I buy a joint and cook it in the slow cooker. I cover in in water. I usually put half in the freezer.if the liquid isn’t too salty I use it as a base for soup. It means there is always something in the fridge for a salad or to add to an omelette. One pound off today. 4 more to go to my maintenance weight. @ditavonteesed great news about the exam results. I am just glad I don’t have abdominal rolls. A 6 pack is a dream too far for me :)

@Pleaseandthankyou I think if you're cooking it yourself it will be a whole lot less processed! For a start, it will be the whole ham. Most of the stuff we buy in packets is re-formed, rather than coming from one piece of meat.

Looking for things to go with fennel, I've spotted a recipe for loin of park, touch of whole grain mustard and creme fraiche. Shall report back.

Oh I like the recipe challenge idea! Mine is pretty basic but a LC staple

*Oven roasted chicken thighs and veggies
*
Marinate chicken thighs in a mix of olive oil, lemon juice, smoked paprika and garlic overnight

On a baking tray arrange a collection of veggies (cauliflower, brocolli, mushrooms and courgette are my favourite) on one side of it

Drizzle with Tesco finest olive oil with chilli and garlic

Place chicken thighs on the other side of tray and roast for 40 mins at 200 degrees

Remove when veg is crispy and a bit charred and when plating add a handful of strong cheddar to the veg

Easy and yum 🤤

I can never bring myself to try fennel it just seems so wrong.
I shouldn't have mentioned the 6 pack obsession to my pt, I can't bend in the middle anymore. 😂
I feel so positive today, I didn't realise how weighed down I was feeling it's like everything is happy and nice. I have bought more halloween candles than any one person should rightly own.
Thanks for all the lovely comments about dds, I'm so relieved. (Not for me I didn't care what they got but that they are happy and that the hell that has been that school is over).

I love fennel! Don't see what the problem is with it @ditavonteesed?

I generally trim and slice the bulbs into quarters (perhaps more than that if the bulbs are big), and parboil for 5 minutes. Drain and let them dry, then pan-fry in butter and olive oil, letting them go nice and brown - then finish with a squeeze of lemon.

@bella1426 you've reminded me that I successfully cooked chicken thighs in the slow cooker as well. Can't remember how I cooked them, but they came out beautifully tender. I remember that I kept the liquid level below the tops, so that the skins didn't get too wet, and then put them under a hot grill to crisp up the skin before serving them.

I've just read through the spreadsheet, sounds good to me if it's ok for me to join? I have about 7 stone to lose and although I don't have PCOS (I've been tested) I have a lot of the symptoms so I'd like to see if I can reduce some of the symptoms (mainly the beard I grew in pregnancy!) I've just finished breastfeeding so not as hungry and snacky so feel like this is the perfect time to start.
