Week 3 - May 22 Low Carb Bootcamp - moving on to Light?

BIWI · 16/05/2022 08:08

Good morning!

Here's the Spreadsheet of Fabulousness once more

So today you have a choice: you can move on to Bootcamp Light, if you wish - which means you can re-introduce some fruit, some nuts/seeds and some alcohol. Note the use of the word 'some'!

If you wish, you can also now introduce/re-introduce intermittent fasting - most people drop breakfast, but it's up to you how you want to do this. @StuntNun has a thread about how to combine fasting with low carb for anyone who is interested in this approach.

You can, if you wish, remain on Bootcamp, if it suits you and it's working for you. Alternatively you can adopt a hybrid - so Bootcamp during the week and Bootcamp Light at the weekend.

Whichever route you decide upon, good luck! Flowers

My mouth is watering at your moussaka!

L salmon rounds loaded with full fat soft cheese and smoked salmon
D sauteed ham and courgettes with herbs and creme fraiche, konjac noodles, lettuce and spinach leaves
Now - my 2 squares of chocolate...

Loads of water, 2 teas and 1 coffee with cream....

BIWI · 19/05/2022 20:34

Drooling at the vol-au-vents @venusandmars!

My mum, back a long time ago, used to make the most amazing pudding. I keep thinking I should try it to see if it's as delicious as I remember - carbs to one side, of course!

It was a large vol-au-vent case, cooked, then filled with a layer of custard (tinned), a layer of Morton's cherry pie filling (also tinned) and topped with a dollop of (tinned) sterilised cream Grin

I know it sounds odd, but it really was absolutely delicious. Not to be recommended on Bootcamp, obviously!

@TheRealShedSadie

I'm a big fan of rhubarb and am pleased to contribute my way as chop it into pieces and back on medium/low oven (gas mark 4) for up to an hour. No sugar, a dash of water and add a knob of butter when it is done.

Server as a vegetable, it is particularly delicious with a grilled duck breast.

Or with Greek yoghurt, a spoonful of double creme and a dash of cinnamon.

Eating it sugar free makes me feel sooo super sophisticated.

We make rhubarb gin.

One supermarket pack of rhubarb (probably about 5 or 6 sticks).
1.5 litres cheapest gin

Chop rhubarb into inch squares, put them into a non-metallic bowl and pour the gin over the top. Cover the bowl.

Stir a few times each day. Around 4-5 days later, strain the gin back into the gin bottle, Discard the rhubarb,

It's beautiful. Doesn't need anything else added to it.

Had a lovely tea tonight - halloumi fajita salad (no tortilla wrap obvs)

Chilli halloumi
White onion
Mushrooms
Mixed frozen peppers
Cumin
Paprika
Garlic

Fry the halloumi then leave aside (i like it quite charred). Fry veg with spices then add halloumi back in. Served on spinach with a mashed avocado and grated cheese on top.

It was really nice and a bit of a change from the meat on the bone i've been having lately. Enough for lunch tomorrow as well.

Progress-wise i've now had three consistent days in the 13 stone bracket so happy about that. 14.1 was a very sticky pound for me this time. Is it deranged to flip the bird at bathroom scales?

venusandmars · 19/05/2022 21:42

@BIWI I was slightly distracted from the actual cooking. But I was drooling Blush

@FinallyHere Yeah! Rhubarb used as a vegetable - excellent. I've added it to red cabbage before, which is also good with things like duck.

BIWI · 19/05/2022 21:43

With red cabbage! That's inspired. Never thought of that. I love red cabbage.

This sounds like a nice pimp for Prosecco too! We've got a ton of rhubarb in the garden.

pinknsparkly · 19/05/2022 21:53

Thanks for all the excellent moussaka suggestions. I think I'll give the grilling suggestion a try first!

We've just had a very random fridge dinner of left over beef in gravy, left over pesto chicken, scraggly salady bits and blue cheese!

TheRealShedSadie · 19/05/2022 22:11

Brilliant rhubarb ideas Finally, venus and BIWI thank you! My Dad used to eat it raw dipped in sugar. I’ve chutneyed, stewed and fooled it generally.

venusandmars · 19/05/2022 22:45

@TheRealShedSadie oh yes, rhubarb from the garden, dipped in sugar. But strangely we used to do the same with lettuce!!

venusandmars · 19/05/2022 22:48

And we used to cut a square hole in the skin of an orange, stick a sugar lump in the hole. Then squeeze the orange and drink the juice through the sugar lump. No wonder my teeth were rotten!

1960's into 1970's sugar was the answer for everything unpalatable!

FinallyHere · 19/05/2022 23:48

Another veggie option, a light supper celeriac chips with smoked paprika Mayo

Melt a small amount of duck fat, peel and chop a small celeriac into large chip shapes. Dip the shapes into the duck fat to coat and roast for a good 35 mins in an oven or halogen oven at 275decC

Mix a teaspoon (or to taste) hot smoked paprika into a 50:50'mix of Mayo / Greek yoghurt.

Dip chips into Mayo and enjoy.

TheOnlyMrsW · 20/05/2022 07:22

Didn't go anywhere near the pizza yay me, too many glasses of wine at the gig not yay me 😂.

Absolutely starving this morning as haven't eaten since yesterday lunch so need to drink my own bodyweight in water and get my head into work......no meal plan at all for today and next week so will have a look at books for BIWI's challenge.

Aubergine is foul minging and should only be used as an instrument of torture!!!!!

Lougle · 20/05/2022 08:43

I weighed myself this morning and I'm 1.4kg (3lb) down. As I didn't actually vomit or have diarrhoea, I've chosen to reframe Wednesday as an 'intermittent fasting' day 🤣

I had a nice breakfast today of 2 poached eggs and an avocado.

I've noticed two things so far since starting this WOE:

  1. I am noticing seasoning so much more. I've started to really enjoy black pepper on my food.
  2. The amount I need to eat to be satisfied and not hungry before the next meal is so much smaller than I imagined it would be. Yesterday I had cavolo nero (around 100g) with a small serving spoon of bolognese sauce. Before this WOE I would have had a couple of big scoops of spaghetti and 2 big spoonfuls of bolognese sauce.
Mercedesbenz2022 · 20/05/2022 09:18

I don’t normally eat breakfast but dp is doing building work and obviously 🙄 ‘ needed ‘ a bacon buttie , so I had smoked bacon and a fried egg , delicious ( no bread )
I am still sts !! In fact I thought my scales had jammed but I got into a favourite pair of jeans that I couldn’t even make the zip meet on , not so long ago .
the weight can sts if I keep losing inches / bloat
I also bought a t shirt a size down so another little win

I have noticed that my eyelids are not swollen anymore and I manage to get mascara on the lash only rather than the eyelid too ! Mind blown by this

Lougle · 20/05/2022 09:21

@Mercedesbenz2022 that's great progress!!

Rshard · 20/05/2022 10:29

That’s brilliant @Mercedesbenz2022

Yay to movement on the scales @Lougle. I think a fair number of us have come to the same conclusion about how much we actually need to eat/suppressed appetite.

My dd is 16 and since she was tiny, will stop eating when she’s had enough. Even if there are two mouthfuls left. I would have crammed the last bits in. We were urged to clear our plates as kids.

TheOnlyMrsW · 20/05/2022 10:35

@Mercedesbenz2022 that's great, I didn't lose much at all in the first two weeks but definitely "feel" slimmer and have lost inches off my waist and hips. Bizarrely after two days of alcohol and bad water the scales are showing 2lb down this morning 😌.
@Lougle glad you seem better!

Have had eggs with butter and some ham for breakfast, now on with water and meal planning, along with tidying in between work calls. It's all very well being a social butterfly but it doesn't get the washing done!!!!!

venusandmars · 20/05/2022 11:20

First 5 days of taking my dgc to school is done (only 15 more early starts to go) so dh and I rewarded ourselves with a trip to the shops then home for brunch of smoked streaky bacon, fried eggs, mushrooms in butter. Yum! That will keep me going till dinner time.

It's nice to hear of everyone's progress , on and off the scale.

colouringindoors · 20/05/2022 15:50

Have horrendous sore throat. Only thing that's helping are Halls Soothers. They're def not low carb 🙄 ho hum.

Lougle · 20/05/2022 16:15

@colouringindoors I'm sorry you're feeling rough. It's not easy to think of things that are low carb when you're ill, is it? I hope your throat is better soon.

StuntNun · 20/05/2022 16:55

Bootcampers Assemble! They're slagging of low carb on another thread. https://www.mumsnet.com/talk/amibeing_unreasonable/4553280-to-think-low-carb-is-just-another-faddy-diet Go forth and give your two cents worth!

Lougle · 20/05/2022 17:28

I know you'll give me a moment to grieve here.

Sainsbury's cut the skin off the belly pork 😢😢
