B. 2 fried eggs, 2 rashers, spinach mushrooms and 🍅. Creamy coffee
L. Greek yogurt with cream.
D. Aubergine bake, in tomatoes and cheese.sauce. Salad.
S. Another creamy yogurt.
I did an exercise class this morning and had a swim, so energy good.

@Mercedesbenz2022 I use it for everything I'd use olive oil for! I think it has a higher smoke point than olive oil so god for high temperatures.

Hi all,

Two frantically busy days of being out the house from 6.30am to 9.30pm has led to some dodgy food choices. I haven't eaten anything carby, but it hasn't all been high fat and it certainly hasn't resembled an actual meal, more like boiled eggs with whatever veg I can grab and eat raw. Should be better the next few days though. Also not had enough water still so focusing on that for the weekend. It was always 2l +copious coffee and tea but not enough of the good stuff.

Enough complaining! Some great meal ideas here, just need to work out how to make them more veggie-friendly.

Long weekend here, so excited for it!

I walked another 3+ miles yesterday (before 10am!), due to car issues, this is a real change for me!

I am feeling a bit down this week - a combination of wrangling hormonal teens and a small child who is often furious and likes to tantrum and stamp feet, behind with work, car drama etc. I've lots to look forward to so I think I need to have a nice chilled weekend to try to reset. I have compassion fatigue too (job is helping people and I seem to be the one who helps friends in crisis and is the constant one to offload to - I usually love this, but I'm fed up just now and just need a hug and someone to make me a cup of tea!).

Anyhoo, I'm still losing nicely and (don't want to speak too soon but) I'm currently on track at the moment to meet my weight loss goal for the end of bootcamp. I have upped my water, upped my exercise (by a small amount, but its a lot more than I was doing!) and have switched to eating my main meal at lunchtime.

I had @BIWI's pesto halloumi & roasted veg for lunch yesterday - I'm trying to eat my main meal at lunchtime just now. Then I missed tea due to a stressful situation at home after which I went straight to bed. I know this isn't ideal so may not fast this morning as usual. BTW the pesto hallomi recipe is amazing and one of my absolute favourites.

I have a meal with friends tomorrow and I have been tasked with taking pulled pork (shoulder) and homemade apple sauce. I can swerve the potatoes and pudding when I'm there, but do you have any tips on how to make either pulled pork or apple sauce without sugar? These are the (easy) recipes I was hoping to adapt:-

@heliosfountain well done for KOKO and trying some new things.

I'd just slow roast the shoulder with plenty of salt and it'll be lovely when shredded down. The apple sauce could be made using natvia sweetener, though bear in mind the carbs in apples and that it's easy to have loads when it's cooked into a highly palatable form like sauce. If it were me I'd make normal apple sauce but also make some lovely pork gravy from the pork juices and I would have pork, gravy and veg. Cooking the pork with a bit of liquid and an onion or two will give you some gravy and if you blitz up the onion and juices together it'll thicken it a bit.

Trying to find somewhere to go out for lunch on Sunday with my friends, my choice so I can find somewhere suitable, fiends are veggie. Any good chain recommendations?
I have been all over the place this week, my plan was to be perfect, eat great and do tons of exercise but I've actually just been a stress mess.
I intend to do another 2 weeks on strict boot camp as I have another transgression planned in this weekend (it's my birthday on Saturday and all plans have been cancelled due to the stress around here and I'm trying not to be sad about it).

@heliosfountain sorry you are feeling down. Well done for KOKO. also no advice on the pork but I’d just make normal apple sauce and then have some good bc gravy yourself.
I was reflecting yesterday when approaching a railway station for a long commute home about the pros and cons of bad food choices for an emotional boost. Really no pros ! Someone else Prettybird I think said something similar this bc. I know I will be more emotionally resilient once I kick the bad food choices and get into the zone of this WOE just need to get over the difficult first few days. Anyway no chocolate purchased at the station.
good day food wise with BC packed lunch utterly exhausted when I got home ate cheese and Greek yoghurt straight from fridge and was asleep by 9.00pm. Have loads of asparagus but couldn’t muster the energy. May have a touch of carb flu. Working from home today so will get water and electrolytes in.

@Baystard I am on the spreadsheet added at the bottom. Have a good day everyone and drink your water.

@ditavonteesed poor you I hope come the day you get a bit of birthday fuss made of you. Tapas make a great celebration outing if you have a tapas place near you. Went to a great one last weekend but not a chain.

@heliosfountain there is (I think) a recipe for pulled pork on the meat recipe thread. It’s from the Fast 800 recipe book, and it is delicious

I’ve copied it for you:

Perfect Pulled Pork

This is from the Fast800 recipe book:

1kg pork shoulder joint, trimmed of fat I keep this and make it into crackling

Marinade:

45g tomato purée (about 3tbsps)
30g chipotle paste (about 2 tbsps)
juice of 2 medium oranges
juice of 2 limes
1 tsp sea salt
1 tsp ground cumin
1 tsp ground allspice
1 tsp ground black pepper

Mix all the marinade ingredients together in a large non-metallic bowl

Take any string off the pork and add it to the bowl and cover in the marinade; cover and leave to marinate in the fridge for at least 8 hours

Pre-heat your oven to 170/150 fan/Gas 3

Place the pork and its marinade in a medium casserole, cover and bake for 3-4 hours, or until the pork falls apart when prodded with a fork

Transfer the pork to a board or warmed platter and shred with two forks. Serve with a little of the spicy cooking juices spooned over

Serves 6 (3g carbs per serving/171 cals per serving)

@teraculum29 it doesn't look like you had very much food yesterday - only cottage cheese for breakfast (which is generally quite low fat)? and no food at lunchtime? In general on this way of eating there is encouragement to eat heathily, rather than bullet proof coffee. Was it a one-off or is that your general pattern?

I'm back home from my lovely 5 week holiday. dh and and I survived the extended time in our campervan. It was very relaxing - simple food (plus lots of eating out), shorts and t-shirt most days, plenty of fresh air and gentle exercise, and I am 5lbs lighter than when I left (which shows how truly terrible my lifestyle and eating and drinking had been during the first 4 months of this year). Italian food was surprisingly easy to adapt to low carb (once you rule out pasta, risotto and gnocci). I had one pizza and one gelato, and then some pancakes when I was in Amsterdam. And I did have some wine. Anyway I hope I've got my mojo back and I'm up for a good bootcamp for the rest of the period. I've been on bootcamp-lite for the last 2 weeks, so I'm going for strict bootcamp for the next 2.

B - yogurt and cream, coffee
L - scrambled eggs, mushrooms, a small piece of black pudding
D - homemade thai green vegetable curry including green beans, cauliflower, broccoli, spinach and baby sweet corn

I'm doing to dc's for dinner (can't wait to see dgc again) so I've also made a cocnut milk and lime ice cream, which the other will have with mango and passionfruit.

D: someone mentioned what they did with Turkey mince last week and I tried something similar with sausage meat: Italian sausage meat (v low carb) fried with onion, fennel seeds, passata, chilli's and cream. Had mine with buttered cabbage with parmesan and kids and DH had pasta

On 4th litre of water. Feel so full up!
This is the end of my first week as I was late starting, it has gone well I hope

Middle child (aged 2) currently having a total meltdown about wanting his chopped up grapes (which he asked for) unchopped. Neighbours must think he is being violently attacked 😳

Why no breakfast though? First rule of Bootcamp is that you should have 3 meals a day for the first two weeks

Dinner: egg fried rice (konjac rice) with roasted pepper and aubergine and mixed salad with drizzle of olive oil.

Fluids: loads of redbush tea, just brew lemon and ginger tea as well.

I agree with @venusandmars - this isn’t really Bootcamp! We don’t advocate bulletproof coffee on this WOE. You should be eating more nutritious meals.

Morning everyone 😊

Breakfast: scrambled eggs and cheese again. I enjoyed it yesterday.
Lunch: bacon and salad with cream afterwards.
Dinner: beef stir fry with lots of vegetables and then cream again afterwards.

I dont like water unfortunately.
I do drink plenty though but not water - herbal teas, redbush tea, green tea, pepper mint etc.

And as of bulet proof coffee, I'm drinking it twice or 3 times a week when at work, it just keeps me going.

Work days are a bit less calorific, always has been.

Anyway

Todays breakfast:
2 boiled eggs, half of avocado, 6 cherry tomatoes, 80g of cucamber, 7 green olives, 3 slices of roast pork loin ham, big tablespoon of mayo.
Coffee with soya milk.

done 1 hour walk to and from school.(half hour each way)

@BIWI - is your (apparently fantastic) recipe for pesto halloumi and roasted veg on the recipe thread? Ds is coming down on Monday (late) with his girlfriend Shock who is veggie. We're eating out on Tuesday (his favourite: Sarti's, an Italian restaurant which is a Glasgow institution, does brilliant pizzas and pasta but also has plenty of low carb options, especially as they'll swap potatoes for lovely garlicky wilted greens) but I need inspiration for Wednesday night. Was thinking of the Robert Carrier Avocado, almond, cheese, tomato and cucumber salad (which I'm sure I've posted on the Veggie recipe thread) but was trying to think of something along side it.

Because paragraphs aren't showing for those on the app, which makes long posts difficult to read, I'm going to do the rest of my news in a separate post Grin

On my work days I tend to have a quick breakfast (usually egg and some sort of salad) almost on the go sort of thing

But was in a rush yesterday morning so I grabbed the cottage cheese (full fat one).

Also on work days (2 or 3days a week) I tend to have a bullet proof coffee with Coco oil (to up my fat content) as my breakfasts are much smaller than on non working day as a bit too much rush.
I used to have double cream in it but my stomach not always agreed.
So instead I have soya milk and Coco oil in my work flask.

I tend to not have lunch at work as doing physical work with full stomach was giving me indigestion.

The good news is that I'm now down to 12st 3 3/4lb - that's a loss of nearly 9lb since I started ShockSmile

The bad news is that as of yesterday I still couldn't get into my red ball dress Sad The side zip did up further Wink but dh didn't want to force it over my rib cage. Blush

I've not tried it on today but I'm doing an extended fast so I'll see tomorrow night when I get back from Murrayfield (with an hour and a half to get ready) whether it can be done up. Hmm

I do have a back up outfit, which is an Austin Reed heavy silk purple ankle length straight skirt and matching waistcoat (there's a jacket too but I won't wear that as it makes it took too weddingy). Zip didn't quite do up to the top a week ago (but was hidden by the waistcoat) but I think it will do up now (haven't tried it on again). It will also go really nicely with my precious pair of LK Bennet purple shoes. Smile

Seriously Low Carb have 30% off until 3pm today, if anyone was planning to buy some bread or rolls. I do find the rolls handy for when DH cooks burgers for dinner!
