I'm preparing for my first week on boot camp and wondered if anyone had any nice soup recipes. It's freezing cold in my office and soup is my lunchtime go to !

@Davina69 If you like broccoli -
I fry half a shallot in a bit of butter. Add the broccoli, a chicken stock pot, veg oxo and a bit of salt and pepper. Boil until soft, then blend when cool. I keep it in the fridge in a cleaned out plastic milk carton and find it will keep for a few days. I make enough to last 3 or 4 days and I add double cream after I warm a portion.
There are no exact measurements, just make however much you want. I usually use two med sized heads of broccoli.

I have a soup maker.

I have soup really hot in a thermos everyday!

I use chicken, sweet potato, red and yellow pepper and carrots.

Unfortunately, I don't think anything other than the chicken would be suitable for the first week of bootcamp. Sweet potato and carrots are quite carby

I use chicken, sweet potato, red and yellow pepper and carrots.

This would end up being really quite carby!

@Davina69 have you checked out the recipe threads? Stickied at the top of the Low Carb Bootcamp topic. There are several soup recipes there.
