I hope everyone had a good week, and that any Mother's Day treats haven't messed things up too much Grin

So we enter our final two weeks. Still time to shift a couple of those pesky pounds - especially if you keep focused and stay strict. And a reminder, channelling my inner Shag, WATER, WATER, WATER!

Confession : I haven't cooked a meal since DH starting wfh exactly a year ago yesterday. I'm going to have to ease back into it, it was never a strength

The thread is funny though, my step dad is a prime example

Have just put pork belly in the oven. I’m thinking cauliflower cheese, maybe some gorgeous fried broccoli and courgettes. Maybe slap some Parmesan over the top, for fun.

Still wanting to try the Bibimbap, work schedule hasn’t allowed me to get my head around it. It looks straightforward but any new recipe needs attention.

I haven't - I've always worried that the texture would be too dense. However, after making those almond muffins, that really changed my mind. But it's not just the flour, it's the sugar too.

Hello everyone! Bounced up a bit since weigh day but a) had done a tough PT session with hurty muscles (supposed to hold water??) plus I'm due on any minute so I'm not too worried.

I took notes from the horrible thread yesterday and have actually decided I was a bit animal protein focussed so will be trying more veg definitely.

Plus, visited my fancy cook shop today and bought some lovely flavoured oils to start drizzling on instead of dumping cream / cheese in everything!!

I'm slowly starting to move to BC light so am having the odd SLC hot cross bun and a bit of pickled beetroot.

I guess I can 'do' berries now?? Are the frozen ones fine as I love those with yoghurt.

Final question: are there any pancake recipes that don't taste like omelette and don't need a tsp of a specialist ingredient? The ones I can find in the veg recipe thread need chia seeds and coconut flour.

I'm happy to invest if necessary but wanted to see if there was a more run of the mill option (flaxseeds / almonds??)

I have frozen berries with yoghurt for breakfast, they’re fine but watch portion sizes because it’s easy to overdo them when they’re frozen.

It’s interesting that a few have had a rethink about vegetables. At no point on Bootcamp—memory allowing—have I ever seen anyone being encouraged to eat more meat unless it’s around iron deficiency or vegetarians/vegans not getting enough protein. I know it can be tricky.

Also, I do wonder about “substitute food” creep. While I like the Seriously Low Carb bread well enough, and especially their rolls, it’s important—always—to look at the ingredients, the wholeness of the food being consumed.

Which makes me wonder if I—not pointing fingers at anyone else—am embracing this WoE as thoroughly as I could be. It’s made me question red meat and certainly processed meat.

It’s made me wonder if a low-carb product is as useless as a low-cal product.

Mostly it’s reminded me to DRINK ALL THE WATER.

No judgment, just ruminating.

Ps—no one will ever separate me from salt crystal butter. They can tear it from my cold, dead hands when I’m 95, like they did with my Mémée.

The texture did look a bit odd. Swapped the sugar out for stevia, using a fraction of caster sugar for the top. But just looking at it, it may well just all go in the bin ...

@Pleaseandthankyou thank you. I think the biggest difference is no longer wanting to dress to hide my shape. I still have a tummy too, it's just that it no longer covers 1/3 my thighs when I sit down Blush

I would love to reach a point where I could enjoy the occasional 'treat' without feeling like I'm undoing all my hard work. I just don't know if that's realistic? DH lost 5st 10 years ago and has kept it off but he still can't enjoy treats and feels guilty. Before this woe I could never understand why he cut back later in the day after eating for e.g. cake, at least my mindset on this has changed.
The only people I know who seem to be able to eat what they like are long distance runners. As I'm struggling to run for 3 mins I'm not sure I can rely on that as an option ha
I'm waffling sorry

@Oneborneverydecade there’s a lot of relearning healthier habits and choices isn’t there! It’s definitely doable but does need conscious focus and thought to get there.
I now know I can’t have frozen berries & cream in the house, at least they’re all gone now 😂. The next few days I’m going to do quite low carb indeed as I feel I need too...so tomorrow’s food L: scrambled eggs & mushrooms, D: spicy minced beef with celery. Lots of water.

I've made a number of flourless cakes that use ground almonds and substituting erythritol for the sugar and they've been good Smile ds doesn't even realise that they're low carb Wink

They've tended to be cocoa/chocolate based: Nigella's margeurita cake with cocoa and lime, served with a lime cream (using inulin rather than icing sugar) is a particular success. Haven't tried non-cocoa based ones yet.

Today - 4 litres of water plus 2 cups black coffee and will prob have a herbal tea and/or a bovril this evening and some beef jerky

L - courgetti, pesto, artichoke, plus leftovers from yesterday’s dinner (the jambalaya)
S - beef burger, artichoke, mushrooms with garlic and butter, Mayo and guac

Seem ok? What am I doing wrong?? Also know my cals roughly as am putting into MyFitnessPal to check carbs and it’s about 1,200 and 20g carbs

@prettybird it smells looks and tastes the part. But the texture is weird, it’s not like a cake should be if that makes sense? I would say dense as @BIWI said. I dont think i’ll make it again anyway.

I've never used Stevia - and although I now have almond flour , I've rarely used it. Nigella's chocolate lime cake uses ground almonds, so that I'm not changing the recipe much. I've also adapted her chocolate cloud cake, using erythritol.

They're not as light as traditional sponges - but then, they're not supposed to be Wink

This chocolate cake recipe is a very nice low carb one. I've made it a few times. I cut it into portions and wrap in greaseproof paper and freeze.

I actually had a bag of erythritol arrive today. I also have flax meal, though that's more for bread type things (and the Spanakopita thing I haven't got around to yet). I stopped using ground almonds last time I did BC because they seemed to give me stomach ache, so I'm either going to go for a flourless 'cake' or make low carb meringue.
Apart from 3 chips the other night (homemade, skin on) I haven't strayed from BC at all in over 6 weeks since I started. Quite pleased with myself. The SLC rolls are gel, but I try to limit them to a few times a week. Just restocked and ordered some hot cross buns with them (arrived today) but it will all go in the freezer, with the hot cross buns saved for Easter weekend as I'm doing vaccine shifts and will need a treat! I love normal cross huns but mostly doe the smell and the butter, I tend to feel sick after I eat them so hoping SLC ones don't do that.

Breakfast - creamy coffee (it really does keep me going until lunch)
Lunch - SLC roll, ham, cheese, lettuce, butter and mayo.
Dinner - my meatballs recipe (made by DH) with broccoli (airfried).

Still only 2 portions of veg and that's counting the lettuce. Would have done courgette with dinner as well but DH was monopolising the cooker.

Oh and I've had my post period whoosh, so actually lost a kg since last week rather than 0.4kg. Which is nice. 4.5kg down in total since starting BC (2 weeks late). Almost 10lbs! Had really hoped to manage a stone by the end, still possible.
