I rather suspect that a lot of us have been so far off the wagon this weekend that it's disappeared over the far horizon!

having to post on the spreadsheet may sober us all up, in more ways than one!

I hope any cheats were enjoyable. There's nothing worse than deciding to cheat and then not liking it.

But from now, it's time to buckle down and get back into the swing of things. If you did cheat, please don't complain that the scales aren't being kind to you. It's an inevitable consequence.

So let's focus on a really strict week, recognising that this is the end of our first half of Bootcamp.

@BustleInYourHedgerow is that a chocolate mousse recipe that doesn't require melting the chocolate? I think I bought cacao powder last time I was low carb I can't remember why it's different to cocoa powder.

Egg-chiladas! And thank you, I just needed a way to eat what everyone else was eating so I invented those, but I'm sure similar recipes exist online. I topped with a scrape of tomato puree, soured cream and cheeses.
The omelette is all DH and he is famous for his weird and wonderful omelettes (Christmas Dinner with gravy pockets is a particular favourite!).

Welcome to bootcamp, @AnOnly.

So many lovely recipes on here. We had butter chicken from the Roasting Tin Around the World book today. It was lush. I also had a drink outside with a friend which turned into a few.

I’m expecting to have put on this week which is frustrating as apart from this afternoon’s indiscretion I have stuck to the rules entirely. Ah well, KOKO. So many of you are inspiring me. And I do feel slimmer.

Thanks to @BIWI 's recipe challenge, I made lamb chops with lime and Pernod Ouzo. They were lovely Smile  I'll write it up for the recipe thread - together with warnings about inadvertent flambéing Blush

Made roast potatoes for dh and my dad but I just served mine with buttered courgettes and buttery, garlicky green beans.

Served it with a lovely Reserve Carignan from Swartland Wineries (a new addition to our range) which was perfect: not too heavy given the lime that the lamb was cooked in/served with but with juicy red fruits that complemented it.

Had @StuntNun 's chocolate mousse for dessert - made with Lidl's 74% chocolate, which worked well (despite the recipe saying you needed chocolate with a maximum of 60% cocoa). Serving it with pinches of sea salt really enhanced it - which everyone agrees, as I forgot it initially and then went and got it for everyone to add for themselves Grin

This was delicious. Celeriac steak with café de Paris sauce and iceberg wedges with smoky aubergine cream. The celeriac was pricked all over with a fork 40 times. Not peeled just scrubbed and roots removed. Then rubbed with salt and olive oil. Baked at fan 170 for 2and 1/4 hours. A celeriac caramel oozes out. Cut it into steaks brush with the caramel and oil and grill for 6 mins. The sauce was really yummy on it. I think I’ll photograph the recipe as it’s so much to type at at this time of night.

@Jollyholibobs ooh, that's a new and fancy celeriac recipe. I can't read the image on my phone, unfortunately, but probably could on a bigger screen. I'll have to Google Cafe de Paris sauce, sounds French so must be good!

@Oneborneverydecade awake again tonight. Thankfully no screaming fit as I picked him up and walked to a different room to kind of head him off.
Wired again though as i fell into bed at 8.30pm so ive had 6 hours but I can’t start the day at 3am Sad

Oven Baked Ratatouille - adapted from a recipe in The Green Roasting Tin by Rukmini Iyer.

The only change I made was leaving out the breadcrumbs that are supposed to be on the top and replacing them with extra cheese. Also posted on veggie recipe thread.

The trick with this ratatouille is to cut the courgettes really thinly, so they absorb all
the flavours from the sauce (I use a vegetable peeler). This is lovely on the day it is made, but even better the next day, warmed through in the oven, so if you’re in the mood for a spot of batch cooking for the week ahead, this is your dish.

Ingredients

2 large courgettes, very thinly sliced
1 large aubergine, sliced into 5mm half-moons
2 red peppers, roughly chopped
1 red onion, roughly chopped
2 cloves of garlic, crushed
2 tbspolive oil
2 heaped tsp sea salt
Freshly ground black pepper
25g fresh basil, roughly chopped
2 x 400g tinschopped tomatoes
30g Parmesan, grated
50g cheddar, grated

Instructions

Preheat the oven to 180°C fan/200°C/ gas 6.
Mix the vegetables, garlic, oil, salt, pepper and basil in a medium-sized roasting tin
or lasagne dish, then top with the tinned tomatoes. Smooth the tomatoes over the
vegetables, then transfer to the oven and roast for 30 minutes.

Remove the tin from the oven and increase the heat to 200°C fan/220°C/ gas 7.
Give the vegetables a bit of a stir, then top with the cheese and return to the oven for a further 30 minutes.
Leave the ratatouille to cool down for 10–15 minutes, then serve with plenty of
crusty bread.

Don’t panic if it looks like there’s too much liquid in the tin after the first 30
minutes; this absorbs perfectly by the end.

Can someone tell me what they think abijy my food today.

Brunch 2 boiled eggs mashed with butter, a cold chicken leg with skin all with some mayo on the side.
Dinner - lamb steak. Fried courgettes, spirits, celeriac all cooked in butter. Plus a mustard and creme fraiche sauce with some lemon juice on top.

4.5 pints of water. 1 tea, 1 creamy coffee.

@cheeseisthebest Only thing I would say is try to incorporate some veg into lunch too. Even just a little bit. I quite often have buttered sprouts as a side (just done in the microwave so it’s super quick and easy) and have that as a second course after all manner of things, if I don’t have anything that ‘goes’ with what I’m having for lunch (or can’t be bothered to make something more involved).
