Several-time bootcamper now veggie and struggling

Calling @BIWI or anyone else who can help! I have done bootcamp several times over the past 5 years but have now gone veggie and can’t find my low carb mojo.
I am struggling without go-to snacks like salami, and also without the easy option of meat with buttery veg for dinners.
I would really appreciate some help!

Well, @PseudoBadger, the first thing I'd say is give up being a veggie! Grin

As far as snacking is concerned, if you keep your carbs low enough then you shouldn't be hungry between meals. But snacks like cheese and olives are good, as well as nuts - if you have to snack.

For meals, go and have a look at the pinned recipe thread in the Bootcamp section - lots of lovely ideas for vegetarians there.

Also, Rose Elliott has written her own low carb plan for vegetarians, so have a look out for her book. There's a recipe book that goes with it, which also has some lovely recipes in it.

I'm a vegetarian and low carber. It's the only way of eating that works for me as I go crazy when I eat carbs!

Today I've eaten coleslaw (cabbage and onion ) with mayo and mashed eggs with mayo and some grated cheese on top. Had some Danish blue as a snack. Also had strawberries and raspberries and cream.

How much do you have/ want to loose?

The new book by Dr David Cole is great for vegan and vegetarian low carb eating. The book is called Ketotarian.

You could try low carb soya spagetti from Aldi. It cooks in 3 mins. Make a soya mince, tomato chunks and passata sauce with herbs. My dh is vegetarian and doing keto with me and he has this. He says it is tasty and he takes some for lunch to work next day and heat sin microwave.
