LC Picnic recipes?

We're going to a do at the weekend where a posh picnic is called for. Last year I made sorts of wonderful picnic loafs and the like. I'm committed low carb and maintaining now so don't want to carb it up. Does anyone have any inspiring LC picnic recipes they can share?

Thanks x

Frittata filled with low carb veg like shallots, leeks, asparagus and/or courgettes, left to cool and then sliced.

A raw courgette salad, using strips of different coloured courgettes with some cherry tomatoes.

Slices of bresaola spread with some horseradish and rolled up with some rocket.

Plain boiled eggs - or quail eggs if you want to be posh Wink - with a wee container of mixed salt and pepper.

Scotch eggs! Roll in Parmesan and herbs instead of breadcrumbs.

Go the Bootcamp recipe threads - there's a lovely quiche recipe there (on both the vegetarian and meat threads) for a Gruyere and shallot tart (or bacon, Gruyere and shallot tart) which uses almonds for the pastry. It's lovely. (Better made the day before the picnic)
