Morning campers!

Five weeks for me till I go off to Oz, so really have to knuckle down. 'Sadly' I have two social events to navigate this week, so that will make things tricky.

Enjoyed a fabulous (if I say so myself!) dinner last night - fillet steak, which I'd marinated in oil/vinegar for 20 minutes, griddled for just a couple of minutes on either side, so beautifully rare, with a mixed salad (butterhead lettuce, which I love) and a shallot vinaigrette. Could eat that all over again for breakfast!

I have a joint of pork to roast and some lamb shanks to cook in the slow cooker this week.

I another with a bit of a cold. Don't cope very well with feeling sorry for myself, so had a carb fest yesterday. Never mind, I've put it behind me and KOKO today.
B - Hb egg, cheese, coffee with cream
L - mackerel salad
D - sausage bake

gcal you show him! my BMI was overweight and borderline obese in Jan, now I am in the healthy range.

Feel in the zone today for some reason, the best I have felt on BC so far, possibly helped by the fact that DH is finally home after 5 months away (gosh sounds like he has been in prison doesn't it? just working though)

B - planned fast, did 20 hours on a cup of tea and a coffee, not pure fasting as need a cuppa in the mornings but hope it will work, lots and lots of water
L - lc cracker bread with loads of butter, brie, parma ham, leaves, cucumber, hm mayo
D - more swedish meatballs, creamy mustard sauce, cabbage and leek fried in butter with caraway seeds

Been slack at posting food for last few days but have been doing ok despite a meal out and a work lunch. Off out in a bit and probs won't eat so just having some cheese and a coffee to keep me going and got some Brazils in my bag for emergencies. Feeling a bit better today but have a headache hangover which could benefit from some paracetamol maybe.

Wednesday was:
B: eggs, butter, avocado
L: Greek salad with added prawns and olive oil
D: shared starter of meatballs in spicy sauce and creamy garlic mushrooms then chicken and mozzarella salad, lots of olive oil. Sure there were hidden carbs but did the best I could with what was available
S: mini bar of 75% choc, two glasses of white wine

Yesterday:
B: eggs, butter
L: three tandoori chicken thighs, salad - wok buffet so no idea of marinade
D: two 97% meat sausages, swede mash, roast broccoli, two bars of 75% choc, 3/4 bottle of red

Today
B: a few chunks of cheese
L: not much
D: going to make fathead pizza for the first time it's goats cheese, Parma ham and basil - tres excited Grin

Hello everyone, I've been pretty much on course this week although I haven't done as much walking as I should have. Today's food:

B=scrambled eggs and spinach fried in butter
L=tuna mayonnaise with leaves, celery & cucumber
D will be hm curry with cauliflower rice (trying the Asda pouch) and my hm version of mushroom bhaji for me, basmati, naan etc for everyone else

gcal I can't quite believe it myself, hope it does not sound like rubbing it in for those who still have more to lose, intended to be encouraging. Also, I must not get complacent as could be pride coming before a carby fall which always seem to come when you least expect them don't they?

B - avocado, scr eggs, cuppa
L - full english at Cafe Rouge minus the beans and toast, was lovely, but had a small pot of tea with milk which is not so good
D - hm cheeseburger with lettuce wrapped around, cucumber, avocado, hm mayo, a few pieces of dark choc

have started to buy a few foodie bits for Christmas, got some macadamias and other mixed nuts without the high carb ones. Also some special smoked salmon in the freezer - feels good to walk past the usual fayre as all sugary stuff

Made the fathead pizza but went wrong somehow I think. On the internet it looked like people had a dough - mine was really runny and watery. It tasted OK in the end but was not firm and crunchy. Where did I go wrong?

Chester I make fathead dough quite a lot. What kind of mozzerella did you use? Was it aged? I've heard of it going wrong when people try to use a ball of fresh stuff. I always use a bag of preshredded 'pizza' cheese or mozzerella. It has some carbs but still low.
Nuke the mozzerella and cream cheese until the mozzerella is melted and beat until it comes together in a ball, continue beating as you pour in your egg and ground almonds. Oil you hands and push dough out onto a greased or silicon tray. It's never going to be like a dominoes thin and crispy base, it's more like a classic pan pizza, slightly doughy but with a nice holed crunch. Hope that helps. X

Ooh I used mozzarella balls in water and when I microwaved it it went even wetter. That sounds like where I went wrong. Cheers Gcal, will try again with the bagged stuff.

Glad to hear your DH is back home from prison Lex!

I must try that fathead pizza; it always sounds yummy but I've never got round to it.

Another here feeling a bit coldy. Headache and generally under the weather. Not helped, I have to say, by a horrible week at work in terms of workload - 3 days this week I was at my desk by 7.30am, and apart from yesterday (as it's 5pm drinks at work on Friday!), haven't left earlier than 6.15pm.

Not a bad week foodwise, although I have had quite a lot of dairy, in the form of yoghurt/cream for breakfast, which is absolutely delish, but I know doesn't help me. And I'll gloss over the choices I made for last night's takeaway Blush.

Anyway, I'm about to go off to the gym to see my trainer. Fireworks party at a friend's tonight. It's a potluck evening, so no idea what other people are going to bring - we're taking a cheeseboard, so at least I know I can eat that!

thanks BIWI, you really must try fathead pizza, I still like the cauli one but this is less of a faff and v tasty. hope you feel better and enjoy your party.

can I just say I am loving having a hot breakfast now it is so cold in the mornings, perfect.

B - fried mushrooms, fried eggs, streaky bacon, one mug and one small cup of tea, creamy coffee
L - havarti slices spread with butter (got the Brittany salt crystal stuff from m&s mmmm, butter is the new crack), parma ham, avocado, lettuce with hm mayo
D - will be salmon & cauliflower curry (pataks rogan josh paste), expect I will have a sq of dark choc later too

Fathead pizza is gooooood. You do have to use the semi-firm yellowish mozzarella.

I cocked up last night by making my paleo salmon fish cakes, realising I'd run out of almond flour and using coconut flour instead. It's about 21g/100g. Oops. Forgot to check and could have sworn it was lower. Tasty though.

I've got a couple of (mindful and planned) days off LC coming up so I'm trying to be really good until then. Determined to go off on a couple of days away wearing my size 14 jeans.

Spent the day in the garden doing a final sort before winter so just having a couple of gluhweins to defrost Blush Am certain it's got sugar in but dammit, it's so good. Will switch to normal red for the rest of the night now.

Just realised I've not had lunch - I love LC sometimes!

B: bacon x2, sausage X 2, eggs scrambled in butter, mushrooms I n bacon fat and butter
D: steak in blue cheese and shrooms sauce, swede chops, roast asparagus

Scales are still being twats, so planning on going dairy free next week if anyone fancies joining me? I've also had a fair bit of wine and some dark choc this week which needs to go if I am ever going to lose weight!

Yeah Chester gluhwein has sugar in and probably won't be helping the scales. It'll take you out of ketosis. :(

I've made mulled wine (sugar free) with red wine, star anise, cinnamon stick and cherry & cinnamon tea bags in. It's great.

Today I had creamy coffee for brekkie, coffee with cream, 3 rashers streaky bacon and two marmite cheddar portions for lunch, as I got stuck out and it was the best option - no veg :(
Dinner was a small rump steak, celeriac matchstick fries, portabello mushroom and cherry tomatoes in garlic butter.

I'm still hungry. Had a tea with cream but still hungry. Today is not an IF day. Roasting a strip of fatty pork belly now.

gcal your dinner sounds delish. I am a bit more hungry too today although sure I have had enough fat and water, think it is the sudden drop in temp, def not a day to IF

in addition to earlier I had a handful of hazlenuts and spinach in butter and coconut milk with my curry, sipping a peppermint tea

Well my weekend hasn't been so great. There has been some loads of alcohol and a couple of food choices that weren't the best, so I'm not looking forward to weigh in tomorrow. It won't throw me off track, I'm back on it today. Good luck for tomorrow Thanks

B - mushroom omelette, cuppa, creamy coffee
L - avocado, cucumber, hm mayo and a bacon & egg roll using lc buns which I have to say were pretty good, quick and easy to make and soaked up loads of butter - think that might be Christmas Day breakfast sorted. Main ingredients are almond flour, ground flaxseeds, psyllium husks, olive oil, creme fraiche & eggs. Been meaning to try them for a while and thought today would be good as also made normal bread with DS for a school project so needed something I could have to prevent me from inhaling the real bread even though I know wheat is evil it certainly didn't smell evil when it was baking.
D - will be apricot chicken, will just have a bit of sauce, loads of buttered broccoli and roasted swede or celeriac

fingers crossed for all of us tomorrow, hope whoosh elves come calling

L: pork belly slices (4) in star anise salt, butter lettuce with a dressing made of some of the spiced pork fat, melted butter and apple cider
vinegar
D: chicken breast, cream, cherry tomatoes, mozzarella and pesto stirred through courgettie.
