Vegetarian low-carb breakfasts and lunches

I'm struggling to find breakfasts and lunches that are:

  • vegetarian (including fish, gelatine, etc)
  • filling
  • take little prep (because I have them at work)
  • taste fine cold, the day after they're made, or microwaved
  • less than 15g carbs, ideally >10g

Dinners ideas are no problem, and I can have more carbs in the evenings anyway. I just find I'm falling back on carbs for breakfast and lunch because they are so easy and convenient.

Have a look at the Bootcamp recipe thread lots of lovely vegetarian recipes there.

Are you OK with eggs? Lots of options if you are - especially for breakfast - the obvious like boiled/poached/scrambled, but also omelettes/fritatta, and muffins

Another option for breakfast is to have leftovers from the night before's dinner - no need to think of breakfast as a different/special kind of meal!

Me too! I hate milk/yoghurt etc and eggs.
