Quick and easy low carb breakfast/lunch ideas for busy mum?

I want to get back to eating low carb but I have a very energetic and demanding 8 month old ds who often scuppers my plans for breakfast/lunch so I end up grabbing toast or a sandwich because it's convenient!

Please can you help me with ideas that I can turn to instead without just eating eggs all day!

Leftovers from the night before! If you plan to make an extra portion when you cook it will help.

Or, full fat yoghurt - depending on how low carb you're going, you could have it with nuts/seeds and/or some berries

Slices of ham and cheese

Spread some cream cheese thickly on a slice of ham (or smoked salmon if you prefer) and roll them up

Pre-cooked sausages (low carb ones naturally!)

Thanks BIWI I didn't even think about leftovers that's how fried my brain is!

I'm going to have berries and nuts so not as low as boot camp more boot camp light iyswim? I have several stone to lose but am now very limited in exercise I can do.
