I am veggie and doing bootcamp, was wondering if anyone out there was in the same boat?

Following a veggie low carb diet brings certain challenges so I thought we could have a thread of our own to share tips? Smile

Non veggies welcome too of course!

It's harder as a veggie to fight carb creep as more of our food is vegetables, which have carbs and we need to use more variety to avoid complete and utter boredom. Lucky meat eaters and their carb free protein

So I try to avoid higher carb products, when there's an alternative, so I will buy the Fage yogurt, rather than the lidl one, stuff like that. But, I know I'm fortunate to be able to do that cost wise.

I buy huge tubs of almonds from Costco. Kirkland.

I treat myself to macadamia nuts.

I mainline avocado.

...and cheese. I can't work out if it stalls me or not. I try to avoid it being the main component of every meal but fgs, where else to get protein?!

I spend a fortune on food doing this, but I'm fortunate to able to (don't get me wrong, I'm a long way from rolling in it! And I notice the difference!) but if it keeps me off the medication for diabetes it's worth the extra cost.

I haven't bootcamped before. I flirted with low carb a while back but didn't do it properly.
I just found silken tofu, 1.8g per 100g so although I don't really like it I'm going to use that in something with lots of chilli and garlic to spice it up.
The soup I made was fine, but the broccoli gave it a smell I couldn't tolerate. It goes back to pregnancy and morning sickness! Those ideas are good but I'm also a fussy bugger with veggies and I don't like leeks or aubergines or peppers, or onions. I will try the courgette pasta though, and the low carb cheese sauce.

Soups with cream are a good option for veggies I think. Also broccoli and Stilton. Mushroom soup with cream is lovely and very easy!

Almond flour is good for pancakes, muffins, crackers ( good with Parmesan). I would have thought you could have more nuts if you're veggie?

My favourite breakfast is one I've never heard of anyone else having before - I cook up milled flax as if it were porridge. I sometimes cook it with raspberries if I can afford the carbs and I eat it with Splenda or some Da Vinci caramel syrup plus lots of cream. It's delicious and keeps me from getting stopped up! My favourite flax to use is Linwoods pumpkin and sesame seed.

For dinner one of our favourites is "Mexican Cauliflower". I steam some cauliflower. Then I mix together a bunch of full fat cream cheese and some cheddar that I've grated, plus chili powder and I like to add some chipotle Tabasco but that's optional. Add some raw spinach and the cauliflower to the cheese mixture and put in a baking pan. Grate more cheese over the top, then bake at 200 C for 20 minutes. DH and I both love it. Goes great with avocado and/or sour cream.

Cat. The Mexican cauli sounds good!! Flax is another one you have to be careful with, some oeople are fine, others stall terribly with it.

Mummy had a yummy dinner today, fried mushrooms with garlic, cream and Philly, grilled halloumi, asparagus in butter and salad! I was hungry :)

cat if you are happy with what you are losing then it's fine isn't it? It stalls some people, not others and something you could look at if you stall...

Thanks for the good wishes Chipping. The funeral went ok - well, it was horrible, but as nice as could be expected - and it was good to see the family afterwards. We had snow where we were staying so left the medication in the fridge in the boot, and it stayed cold enough without being switched on! You're right, it's not like we had many options, we were lucky it was chilly weather in that respect.

I've made roasted veg and halloumi for lunch tomorrow, with roasted broccoli as a snack (everyone at work thinks I am VERY weird!), but I do struggle at breakfast. I'm not really a breakfast person and it's as much as I can do to shovel some yoghurt down, I tend to have that about 10 when I've finally felt hungry.

Egg collection day on Tuesday and the hospital have warned me I'll probably feel a bit sick/ out of it afterwards, will have to see what I can face eating later on!

Hi Ruby, I'm glad the funeral went as well as could be expected and that the meds were ok.

Egg collection on Tuesday, scary but exciting!! How far from home do you have to go?

If it were me I'd make some soup, some cheesy veg and cook some halloumi. I'd have avocados, cheese, Seeds, almonds, macadamias, yogurt etc They'll all keep and will give you a variety of things to choose from.

I'm excited for you!

Thanks Chipping! I'm excited but also feeling rough after the Buserelin injection Sad there's a sickness bug going round at work, which at least gives me a good reason for taking time off!

Not managed much food yet at all - lots of water but can't face my healthy lunch. Will get a (bland) sandwich and see if that helps. Realised that I do feel loads better when I low carb, but that doesn't help at times like these.

The hospital is 20 miles away which isn't too far, but we're heading into London which makes it busier. OH (who isn't a mornings person) isn't exactly delighted about having to get there for a 7am start!

How long before you know whether it was successful or not?

I know what you mean about not fancying salad, but something 'softer/gentler' like a sandwich. There are times when you just have to have what you can face. I try, when I feel like that, to have avocado and grated cheese mixed together, with some seeds and afterwards some macadamias.

I wish LC was like weight watchers or whatever where one 'wrong' thing didn't have such an impact. But sadly with LC it does. Bugger. The worst thing, I think, is not that it stalls weight loss, but actually makes it wires because you've had the fat and the carbs so both end up on your hips. Little bastards!

Hi all. I have been low carbing for a couple of weeks now and I don't seem to be losing weight. I've just read on another thread that this could be due to eating too much dairy, but if I am veggie and also don't eat dairy, what am I left with - some veg and nuts? Has anyone else had problems with dairy stopping them losing weight? I like the LC way of eating (rarely feel hungry) but I don't think I could continue if I couldn't have dairy...

Avoid nuts they are high carb! 10 Brazil nuts might be ok but generally avoid.
I eat eggs with butter for breakfast, salad with avocado for lunch and cheese at dinner. Silken tofu is a good low carb protein.
