I make cheesy veg, a lot. A LOT. I steam (only because it's the easiest way of cooking lots of veg at once) courgettes, cauli, broccoli, spinach (wilted at the end). Other veg too, whatever I've got in, but they're the staples. I'll include carrot if I'm dicing with carbs

Cheese sauce, large pot of double cream, grated cheese, a little pre grated cheese to thicken it (it has potato starch in it, so I try not to use too much, but there are nights when it's all pre grated. It's that or fall off the wagon). Mustard powder & ground black pepper.
Tip over veg, enjoy.
Next night I might add a different veg, quite often I'll hear it up and add some uncooked pepper.
I can eat this a few nights in a row or take to work etc.
Likewise I'll make a mushroom sauce and do the same.
Veg lasagne with leeks instead of pasta.
Stir fry.
Aubergine parmigiana.
Lots of nice veg recipes out there if you like cooking.
It's the protein I find difficult.
Well, actually it's the lack of convenience carbs!
